CHERRY BANANA BREAD

Cherry Banana Bread image

I plan on making this for the holidays and serving it with vanilla ice cream and chocolate sauce. A faux banana split complete with bread? What else could be better? The original version of this recipe is from Easy Home Cooking. I've listed vegan alternatives for those who want to make the bread without animal products.

Categories     Quick Breads

Time 1h30m

Yield 1 loaf, 16 serving(s)

Number Of Ingredients 8

1 (10 ounce) jar maraschino cherries
1 3/4 cups all-purpose flour
2 tablespoons baking powder
1/2 teaspoon salt
1/2 cup sucanat or 2/3 cup firmly packed brown sugar
1/3 cup butter or 1/3 cup margarine, softened
2 eggs or 1 mashed ripe banana
1 cup mashed ripe banana

Steps:

  • Drain maraschino cherries, reserving 2 Tablespoons juice.
  • Cut cherries into quarters.
  • Combine flour, baking powder, and salt; set aside.
  • Combine sugar, butter, eggs [or ONE mashed banana], and reserved cherry juice in large bowl. Beat with electric mixer at medium speed 3-4 minutes or until well mixed.

  • Bake in preheated 350 degree oven for 1 hour or until brown.
  • Remove from pan and let cool on wire rack. To store, wrap in plastic wrap or foil and keep in a cool, dry place.

PINEAPPLE-BANANA-CHERRY SMOOTHIE

Pineapple-Banana-Cherry Smoothie image

I just purchased a new smoothie machine and have been tinkering with recipes. This was this morning's and a real winner!

Provided by Heirloom

Categories     Smoothies

Time 3m

Yield 2-3 serving(s)

Number Of Ingredients 6

6 ounces orange juice
1 banana, broken into 3 pieces
4 ounces crushed pineapple, in it's own juice
1 tablespoon soy protein, powder
1/2 cup frozen cherries
1/2 cup nonfat yogurt

Steps:

  • Add all ingredients, starting with liquids first and puree.
  • Serve in chilled glass.

Tips:

  • Prep Ingredients: Before you start baking, make sure all your ingredients are measured accurately and at room temperature. This ensures proper mixing and a consistent batter.
  • Use Ripe Bananas: Overripe bananas add sweetness and moisture to the bread. If your bananas are not ripe enough, microwave them for a few seconds to soften them up.
  • Mix Dry Ingredients Thoroughly: Whisk together the flour, baking soda, baking powder, and salt in a separate bowl before adding to the wet ingredients. This ensures an even distribution of the leavening agents.
  • Cream Butter and Sugar: Use a hand mixer or stand mixer to cream together the butter and sugar until light and fluffy. This incorporates air into the mixture, resulting in a tender crumb.
  • Add Eggs One at a Time: Beat in the eggs one at a time, allowing each egg to be fully incorporated before adding the next.
  • Gently Fold in Dry Ingredients: Use a spatula to gently fold the dry ingredients into the wet ingredients. Overmixing can result in a tough crumb.
  • Chop Fruit Evenly: Cut the cherries, pineapple, and bananas into even-sized pieces. This ensures they distribute evenly throughout the batter.
  • Bake at Proper Temperature: Preheat your oven to the correct temperature before baking. The temperature and baking time may vary depending on the recipe, so follow the instructions closely.
  • Check for Doneness: Insert a toothpick or skewer into the center of the bread. If it comes out clean, the bread is done. If not, continue baking for a few more minutes.
  • Cool Completely: Let the bread cool completely in the pan before transferring it to a wire rack. This allows the bread to set and prevents it from crumbling.

Conclusion:

With its delightful combination of cherries, pineapple, and bananas, this bread offers a vibrant burst of flavors in every bite. The moist and tender crumb, enriched with the natural sweetness of the fruits, makes it an irresistible treat. Whether you enjoy it as a breakfast delight or an afternoon snack, this cherry-pineapple-banana bread is sure to satisfy your cravings. Be sure to give this recipe a try and experience the perfect balance of flavors and textures that will leave you wanting more!
