2 teaspoons plus 1/4 cup butter, divided
2 cups sugar
1 cup half-and-half cream
1/4 cup light corn syrup
1/2 teaspoon salt
1 cup miniature marshmallows
1 teaspoon vanilla extract
1/2 cup pecan halves
1/3 cup red candied cherries
1/3 cup green candied cherries

Steps:

  • Line an 8-in. square dish with foil and grease the foil with 2 teaspoons butter; set aside., In a large heavy saucepan, combine the sugar, cream, corn syrup, salt and remaining butter. Bring to a boil over medium heat, stirring until sugar is dissolved. Cook over medium-low heat, without stirring until a candy thermometer reads 240° (soft-ball stage). Remove from the heat; stir in marshmallows and vanilla., With a wooden spoon, beat until mixture begins to lose its gloss, about 10 minutes. Fold in pecans and candied cherries. Pour into prepared pan. Refrigerate for 2 hours or until firm., Using foil, lift fudge out of pan. Discard foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator.

1 c semi sweet chocolate chips
1/3 c each - chopped nuts & chopped, maraschino cherries - drained well
1/3 c evaporated milk
1 1/2 c confectioners' sugar
flaked coconut & chopped nuts for rolling - i use both

Steps:

  • 1. In a medium saucepan, over low heat - melt chocolate in the milk.
  • 2. Once melted add the confectioners' sugar and whisk until smooth. Fold in the cherries and nuts. Chill until cool enough to roll in balls, not so stiff that the coconut and nuts won't stick. You want them a little sticky.
  • 3. Have nuts and coconut ready. I spread each on paper plates. I use about a 1 inch cookie scoop for the size of the balls. Roll into balls and roll in nuts or coconut or both. Chill well. When not eating, keep them chilled as well.

375 g milk chocolate melts
1/4 cup smooth peanut butter
1/2 cup unsalted macadamia nuts, roughly chopped
1/2 cup glace cherries, halved

  • Combine the condensed milk and chocolate in a saucepan, stirring over a low heat until chocolate melts. Add the peanut butter, nuts and cherries and mix until smooth.
  • Pour mixture into a lined 28cm x 18cm slab tin and refrigerate until set.

This is a favorite around the Holidays. I'm not sure where the recipe came from - off of the can of sweetened condensed milk or the chocolate chips (for the basic Fudge). I just know it is so easy to make! And the addition of the cherries and nuts makes it oh so delicious!

12 oz semi-sweet chocolate chips
1 can(s) sweetened condensed milk (14 oz)
dash of salt
1 c pecans, chopped
1 tsp almond extract
1/2 c maraschino cherries, drained well and chopped
note: important...you want to drain off as much juice as possible. placing the cherries on paper towels helps to pull out more juice.

Steps:

  • 1. Line an 8 or 9 onch square pan with aluminum foil. This makes it easier to take the fudge out of the pan.
  • 2. In a large glass bowl combine chocolate chips, sweetened condensed milk and salt. Microwave on high 2-3 minutes. (Check after 2 minutes)
  • 3. Quickly stir in nuts, almond extract and cherries.
  • 4. Spoon immediately into foil lined pan and chill 2 hours or until set.
  • 5. Remove from pan, peel foil off and cut into pieces. Store in the refrigerator.

2 Tbsp butter
1 1/2 c sugar
1/4 tsp salt
2 c mini marshmallows or i have used a 7 ounce marshmallow cream
1 tsp vanilla
1 1/2 c semi sweet chocolate chips
1/2 c chopped nuts
1/3 c chopped maraschino cherries - drained well

Steps:

  • 1. In a medium saucepan, mix milk, sugar, butter and salt. Bring to a boil, stirring constantly. One boiling time 4 1/2 minutes. Stirring the whole time. Remove from heat and stir in chocolate, marshmallow, nuts, vanilla and cherries. Continue stirring until marshmallows and chocolate is melted.
  • 2. Spread into a buttered 9 inch dish. Refrigerate until firm. Cut into desired sized pieces.
