I love maraschino cherries and coconut. These are so easy that the kids can prepare them and they are great to have in the fridge for a pop in the mouth snack! We usually double this and use a cookie scoop do depending on how big (or small) you make them is how many you will get. Cooking time is chilling time.

1 cup powdered sugar, sifted
1 cup butter, Softened
1 teaspoon vanilla extract
1/2 cup maraschino cherry, drained and chopped
3/4 cup sweetened flaked coconut
2 cups quick-cooking oats
nuts, finely ground

Steps:

  • Mix together all ingredients except nuts. Refrigerate for two hours.
  • Shape into 1-inch balls and roll each in ground nuts.
  • Serve immediately or cover and keep in refrigerator until ready to eat.

1 c semi sweet chocolate chips
1/3 c each - chopped nuts & chopped, maraschino cherries - drained well
1/3 c evaporated milk
1 1/2 c confectioners' sugar
flaked coconut & chopped nuts for rolling - i use both

Steps:

  • 1. In a medium saucepan, over low heat - melt chocolate in the milk.
  • 2. Once melted add the confectioners' sugar and whisk until smooth. Fold in the cherries and nuts. Chill until cool enough to roll in balls, not so stiff that the coconut and nuts won't stick. You want them a little sticky.
  • 3. Have nuts and coconut ready. I spread each on paper plates. I use about a 1 inch cookie scoop for the size of the balls. Roll into balls and roll in nuts or coconut or both. Chill well. When not eating, keep them chilled as well.

1 1/2 c chopped dried tart cherries
1/2 c DARK rum
4 c Nila wafers (finely crushed)
1 1/2 c ground pecans, almonds, walnuts
1/2 c sifted powdered sugar
1/2 c butter, melted
4 T frozen orange juice concetrate, thawed
3 1/3 c white chocolate chips (ghiradelli)
4 T shortening

Steps:

  • COMBINE in a small bowl cherries and rum; cover and let stand 1 hour LINE cookie sheets with parchment In a large bowl combine crushed wafers, nuts and powdered sugar ADD undrained cherries, butter, and juice concentrate; stir until combined SHAPE mixture into 1' balls Place balls on prepared sheets let stand about an hour or until dry In a heavy small saucepan stir baking pieces and shortening over medium-low heat until melted. Remove from heat DIP rum balls in mixture turning to coat. Remove balls with fork; return to cookie sheets, drizzle with any remaining melted mixture. Refridgerate for 15 min or until coating is set
