CHERRY MASH BARS
These ultra sweet bars are always a year-round request, even though I usually only make them at Christmas time. They are very easy to make, and quick! If cherry chips aren't available in your area, butterscotch chips can be substituted.

Steps:
- 1 Combine sugar, butter or margarine, salt and half and half in saucepan. Boil on high heat for about 5 minutes, stirring occasionally. Stir in marshmallows and cherry chips. 2 Spread in 8 or 9" square pan which has been lined with parchment or wax paper. 3 Melt chocolate with peanut butter in a small pan over low heat, stirring occasionally. 4 Stir in peanuts. Spread evenly over cherry layer. 5 Let set in refrigerator. Cut into 1" squares with warm sharp knife (hold under hot water and then dry before cutting).
Tips:
- For a richer flavor, use dark chocolate chips instead of semi-sweet.
- If you don't have a 9x13 inch baking pan, you can use two 8x8 inch pans. Just adjust the baking time accordingly.
- To make sure the bars are set, insert a toothpick into the center. If it comes out clean, the bars are done.
- Let the bars cool completely before cutting them. This will help them to hold their shape.
- Store the bars in an airtight container at room temperature for up to 3 days.
Conclusion:
Cherry Mash Bars are a delicious and easy-to-make treat that is perfect for any occasion. They are made with a simple combination of oats, butter, sugar, eggs, flour, and dried cherries. The bars are then topped with a creamy chocolate ganache. Cherry Mash Bars are a great way to use up leftover cherries, and they are also a popular treat for potlucks and bake sales.
