CHERRY-CHOCOLATE LOAF
I am very proud of my banana bread recipe, which is why I adapted it into this amazing cherry-chocolate loaf. While cherries really aren't anything like bananas, this really did work out extremely well--this loaf is a delicious option for breakfast, brunch, or dessert.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
- Whisk flour, salt, baking powder, and baking soda together in a bowl.
- Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.
- Chop pitted cherries coarsely with a knife, or by pulsing on and off a few times in a food processor. Add to the wet ingredients along with the chocolate chunks and chopped walnuts. Stir briefly to combine. Batter may look curdled, but don't worry.
- Pour in the flour mixture and mix with a spatula until all the flour has disappeared. Transfer batter into the prepared loaf pan, making sure to smooth the top evenly and fill in the corners. Tap pan on the counter to release any air pockets.
- Bake in the preheated oven until nicely browned and a toothpick inserted into the center comes out clean, about 1 hour. Let bread rest in the pan for 15 minutes before removing to a wire rack.
- While bread is resting, combine powdered sugar and milk in a bowl for icing, adding more milk as needed to reach a thin, runny consistency.
- Brush icing over loaf, allowing to drip down the sides. Let cool completely before slicing and serving, about 20 minutes more.

CHEERY CHERRY LOAF
You can serve this loaf year-round- but its cherries give it a pretty Christmasy look. In addition to being a lovely gift, it's something I often include in meals at home. I have also entered my loaf in fairs, where it's always a winner. I'm a widow (three grown daughters) who enjoys baking and crafting.

DRIED CHERRY OR CRANBERRY LOAF
I clipped this recipe from an old issue of Parade Magazine, and they adapted it from a recipe originally found in The Tea Pot Cookbook by Steffi Berne. Posted by request. Plan ahead - the cherries need to soak at least three hours or overnight. NOTE: If you prefer, you can use cherry or orange juice instead of using the liqueur.

Steps:
- Place cherries (or cranberries) in a container with a very tight fitting lid.
- Pour liqueur and hot water over the cherries, seal the lid tightly, and shake to coat cherries well with the liquid.
- Set aside 3 hours or overnight so cherries will absorb the liquid.
- Preheat oven to 350 F (or 325 F for a pan with a black surface).
- Grease a loaf pan and lightly dust with plain dry breadcrumbs, shaking out excess.
- Sift together the flour, baking powder, and the salt.
- In another bowl, cream the butter and the cream cheese until smooth.
- Add the sugars, and the finely grated lemon zest and beat until well combined and pale yellow.
- Beat in eggs, one at a time.
- Add the flour mixture, beating on low speed, just until the flour is combined.
- Stir in the cherries and any liquid still in the soaking container.
- Pour batter into the pan and smooth top with a rubber spatula.
- Bake in the center of the oven for 45-60 minutes- or until a toothpick insterted in the center tests clean, checking as early as 40 minutes into the baking time- if it is getting too brown, cover loosely with foil and continue baking until the toothpick tests done.
- Expect the top of the loaf to crack.
- Let cool in the pan 15 minutes, then remove from pan and set onto a wire rack to cool completely.
- Wrap in plastic and let set overnight before slicing.
- For extra decadence, drizzle a little more liqueur over the crack before wrapping in plastic- don't pour too much or you'll soak the bread.

CHERRY-BERRY STREUSEL LOAF
I am always so excited when summer comes around and fresh fruits abound at the farmer's market. Somehow, we never seem to use them up and wind up throwing fruit away. Steps:
- Cream butter, then add sugar.
- Add eggs.
- Combine flour and baking powder.
- Use some of your flour to coat cherries.
- Alternate the dry ingredients with the milk into the butter mixture.
- Add the cherries.
- Pour into greased loaf pan.
- Bake at 350° for 45 minutes to an hour until brown on top.
Tips:
- Use fresh or frozen cherries: Fresh cherries are ideal for this recipe, but frozen cherries can also be used. If using frozen cherries, thaw them before adding them to the batter.
- Pit the cherries: Before adding the cherries to the batter, be sure to pit them. This can be done with a cherry pitter or by using a knife to cut around the pit.
- Use a sturdy loaf pan: A 9x5 inch loaf pan is the ideal size for this recipe. Be sure to use a sturdy loaf pan that will not warp or buckle in the oven.
- Grease and flour the loaf pan: Before adding the batter to the loaf pan, be sure to grease and flour the pan. This will help the loaf to easily release from the pan after baking.
- Do not overmix the batter: Overmixing the batter can result in a tough loaf of bread. Mix the batter just until the ingredients are combined.
- Bake the loaf until a toothpick inserted into the center comes out clean: The loaf should be baked for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
Conclusion:
This cherry loaf is a delicious and easy-to-make bread that is perfect for breakfast, lunch, or a snack. The loaf is moist and flavorful, with a slightly sweet and tart taste. The cherries add a pop of color and flavor to the loaf, and the streusel topping gives it a crunchy texture. This loaf is sure to be a hit with everyone who tries it.
