1 cup lemon-lime soda

1/2 pound fresh cherries, pitted
1 cup granulated sugar
3/4 cup fresh lime juice
1/4 teaspoon kosher salt
4 cups seltzer
Ice cubes and fresh mint sprigs, for serving

Steps:

  • Place the pitted cherries in a large mixing bowl. Add the sugar, lime juice and salt. Stir until the cherries are evenly coated. Set aside at room temperature for 1 hour to macerate the cherries.
  • Drain the cherry mixture, collecting and reserving all the juice. Thread the macerated cherries amongst 8 cocktail skewers and set aside for garnish.
  • Stir together the reserved cherry juice and seltzer in a small pitcher.
  • Fill 8 highball glasses with ice cubes. Pour the cherry sparkler over the ice and garnish each glass with a skewer of cherries and a sprig of mint. Serve immediately.

2 cups pitted fresh or frozen cherries, plus pitted frozen cherries, for serving
1 cup sugar
3/4 cup frozen limeade concentrate (half of a 12-ounce can)
1/2 cup fresh lime juice, plus lime wheels, for serving
Seltzer, for serving, optional

Steps:

  • Combine the cherries, sugar and 1 cup water in a medium saucepan over high heat. Bring to a boil and reduce to a simmer. Carefully smash the cherries with a potato masher, then simmer the mixture until slightly reduced and dark red, about 10 minutes. Let cool for 10 minutes.
  • Strain the mixture through a strainer into a heatproof container, pressing on the cherry solids to extract all the juice. There should be about 1 3/4 cups of syrup. Let cool for 30 minutes.

1-1/2 cups fresh or frozen blackberries, crushed
1 cinnamon stick (about 3 inches)
1 cup cider vinegar
1-1/2 cups sugar
1/2 cup water
SERVING SUGGESTION:
Optional: Ice cubes, sparkling water and fresh blackberries

Steps:

  • Place fruit and cinnamon stick in a sterilized pint jar. Bring vinegar just to a boil; pour over fruit, leaving ¼-in. headspace. Center lid on jar; screw on band until fingertip tight. Refrigerate for 1 week., Strain vinegar mixture through a fine-mesh strainer into another sterilized pint jar. Press solids to extract juice; discard remaining fruit., Bring sugar and water to a boil. Reduce heat; simmer until sugar is dissolved. Cool slightly. Stir into vinegar mixture; shake well. 4 cups pitted sweet cherries
4 cups sugar
Zest and juice from 2 limes, approx. ¼ cup
¼ cup water

Steps:

  • Add the cherries, sugar, lime juice and water to a large Dutch oven.
  • Slowly bring the mixture to a boil over medium heat stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly, stirring often to prevent sticking, until the jam reaches the gelling point, about 35 minutes.
  • Add the lime zest, stirring to evenly distribute throughout the jam.
  • Use the plate method to check for gelling or use a digital thermometer. Gelling is reached at 220 degrees or 8 degrees above the boiling point of water.
  • Spoon the hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel, top the jars with a lid and a lid ring.
