Tips:

  • Select the ripest cherries: Choose plump, deep-colored cherries with no blemishes. Avoid cherries with bruises or soft spots.
  • Pit the cherries: Use a cherry pitter to remove the pits from the cherries. If you don't have a cherry pitter, you can use a paring knife to cut around the pit and remove it.
  • Prepare the sugar syrup: Combine sugar and water in a saucepan and bring to a boil over medium heat. Stir until the sugar is dissolved. Remove from heat and let cool.
  • Macerate the cherries: Place the pitted cherries in a bowl and pour the cooled sugar syrup over them. Cover and refrigerate for at least 30 minutes, or up to overnight. This will help the cherries absorb the syrup and become plump and juicy.
  • Make the cherry pie filling: Combine the macerated cherries, cornstarch, and lemon juice in a saucepan. Bring to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 1-2 minutes, or until the mixture has thickened. Remove from heat and let cool.
  • Assemble the cherry go-rounds: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. Place a wonton wrapper on the prepared baking sheet. Spoon about 2 tablespoons of the cherry pie filling in the center of the wonton wrapper. Fold the corners of the wonton wrapper up and over the filling to form a square or triangle. Brush the tops of the cherry go-rounds with melted butter.
  • Bake the cherry go-rounds: Bake for 15-20 minutes, or until the wonton wrappers are golden brown and crispy. Let cool for a few minutes before serving.

Cherry go-rounds are a delicious and easy-to-make dessert that is perfect for any occasion.
