1 can (14-1/2 ounces) pitted tart cherries, undrained
1 cup sugar, divided
1/2 cup water
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon grated lemon zest
Dash salt
1/3 cup milk
3 tablespoons butter, melted

Steps:

  • In a large saucepan, combine the cherries with juice, 3/4 cup sugar and water; bring to a boil. Reduce heat; cover and simmer., Meanwhile, in a small bowl, combine the flour, baking powder, lemon zest, salt and remaining sugar. Stir in milk and butter just until moistened., Drop by tablespoonfuls onto simmering cherry mixture. 2 (14 1/2 ounce) cans tart red cherries
2 cups water
1 cup sugar
1 tablespoon cinnamon
1/2 teaspoon almond oil (optional)
3 cups Bisquick baking mix
1 1/4 cups milk

Steps:

  • In a large dutch oven, combine tart cherries (including the juice), sugar, water, cinnamon and almond oil.
  • Bring to a boil.
  • In the meantime, mix together the Bisquick baking mix and milk.
  • When cherries have come to a boil, drop dumplings into cherry mixture by tablespoonfuls until all the dumpling mixture is used.
  • Lower heat to medium and cook uncovered for 10 minutes, then cover and cook for an additional 10 minutes.

I can't remember where I got this - probably on an internet search when we had ripe cherries and I wanted to make something other than cherry pie. I've also made this in the dead of winter using a bag of mixed berries. I added the almond extract and cinnamon to the original recipe.

2 c sour cherries
3/4 c sugar
1/2 tsp almond extract
1/2 tsp ground cinnamon
2 Tbsp butter
DUMPLING DOUGH INGREDIENTS
1 c flour
2 tsp baking powder
pinch salt (a pinch is about 1/8 tsp.)
3 Tbsp crisco
1 large egg
1 tsp pure vanilla extract
1/2 c milk

Steps:

  • 1. Mix the cherries, sugar, cinnamon and almond extract in a deep pot that has a lid. Bring the mixture to a simmer over med heat.
  • 2. In a large bowl whisk together the flour, baking soda and salt. Cut in 3 tablespoons Crisco until the mixture is crumbly
  • 3. Beat together the egg, vanilla extract and milk. Stir GENTLY into the dry ingredients just until incorporated.
  • 4. Drop the dough by a spoon onto the bubbling cherry mixture. Cook 10 minutes without the lid. Cover the pan and cook 10 minutes more.

Tips:

  • Use fresh, ripe cherries for the best flavor.
  • If you don't have self-rising flour, you can make your own by adding 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to 1 cup of all-purpose flour.
