1 package white cake mix (regular size)
1 package (3 ounces) cherry gelatin
1-1/2 cups boiling water
1 package (8 ounces) cream cheese, softened
2 cups frozen whipped topping
1 can (21 ounces) cherry pie filling

Steps:

  • Prepare cake mix according to package directions, using a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick comes out clean. , Dissolve gelatin in boiling water. Cool cake on a wire rack for 3-5 minutes. Poke holes in cake with a meat fork or wooden skewer; gradually pour gelatin over cake. Cool for 15 minutes. Cover and refrigerate for 30 minutes., In a large bowl, beat cream cheese until fluffy. Fold in whipped topping. Carefully spread over cake. Top with the pie filling. Cover and refrigerate for at least 2 hours before serving.

2 c sugar
1 3/4 c all-purpose flour
3/4 unsweetebed cocoa powder (i use hershey's)
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 c milk
1/2 c vegetable oil
2 tsp vanilla
1 c boiling water
ICING:
1 pkg instant chocolate pudding mix (i use jello brand)
2 envelopes of dessert topping mix (kraft dream whip will do)
1 1/4 c cold milk (for topping mix)
1 can(s) cherry pie filling (center of cake)

Steps:

  • 1. Preheat oven to 350F. Grease and flour two nine inch round pans.
  • 2. In a large mixing bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
  • 3. Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, and then remove from pans to a wire rack to cool completely.
  • 4. *NOTE: You can use any chocolate cake mix you want if you don't have time to make it from scratch. (i use BC german chocolate)
  • 5. For icing: In a mixing bowl add pudding mix, topping mix, and milk. (I always double the icing to make sure I have enough)
  • 6. Directions for Icing cake: Smooth icing down sides and about 2 inches over, leaving the whole center free to spoon in your delicious cherry pie filing. Repeat process for second layer.

  • Use fresh cherries. Fresh cherries will give your cake the best flavor. If you can't find fresh cherries, you can use frozen cherries that have been thawed and drained.
