A nice dessert reminiscent of cherry cheese cake! Have this recipe written in my little "special book" - although I got it from one of my many recipe books, I can't remember which one.

CRUST
1 1/2 c graham cracker crumbs
2 Tbsp powdered sugar
1/3 c butter, melted
FILLING
8 oz cream cheese, softened
1 c powdered sugar
1 tsp vanilla
2 c mini marshmallows
1 c whipping cream, whipped
21 oz can cherry pie filling
1/4 tsp almond extract

Steps:

  • 1. Combine all ingredients for crust. Press into ungreased 13x9" pan. Refrigerate.
  • 2. In large bowl, beat cream cheese, 1 c powdered sugar and vanilla until light and fluffy. Fold in marshmallows and whipped cream. Spread mixture over the crust.
  • 3. In small bowl, comine pie filling & almond extract. Carefully spread over cream cheese layer.
  • 4. Refrigerate for several hours or until firm.

Tips:

  • Use fresh or frozen cherries. Fresh cherries are best, but frozen cherries can also be used if they are thawed and drained before using.
  • Pit the cherries before using. You can use a cherry pitter or a knife to remove the pits from the cherries.
  • Use a 9x13 inch baking dish. This is the best size dish for this recipe.
  • Don't overmix the batter. Overmixing the batter will make the cake tough.
  • Bake the cake until a toothpick inserted into the center comes out clean. This usually takes about 45-50 minutes.
  • Let the cake cool completely before frosting it. This will help the frosting to set properly.

Conclusion:

This cherry cream cheese bake is a delicious and easy-to-make dessert that is perfect for any occasion. The creamy cheese filling and the sweet cherry topping are a perfect combination. This cake is sure to be a hit with everyone who tries it!
