CHERRY COCONUT COOKIES

Cherry Coconut Cookies image

The name says it all "Cherry Coconut" They are very different and also have pecans in them. My daughter found the recipe and we made them for our Christmas plates. Give it a try for something different. They were a hit !

Provided by Carol Junkins

Categories     Cookies

Time 20m

Number Of Ingredients 12

2/3 c butter flavor crisco
3/4 c sugar
1/2 tsp salt
3/4 tsp almond extract
1 tsp grated lemon peel
1 egg
1 3/4 c unsifted flour
1 tsp baking powder
1/2 tsp baking soda
3/4 c flaked coconut
1/2 c coarsely chopped pecans
1/3 c quartered maraschino cherries (drained on paper towels)

Steps:

  • 1. Preheat oven to 350 degrees. Cream butter flavored crisco, sugar, salt, almond extract, lemon peel and egg thoroughly in large bowl at medium speed. Combine flour, baking power and baking soda, add to creamed mixture. Blend well. Stir in coconut, pecans and cherries by hand.
  • 2. Form into 1" balls. Place on un-greased baking sheet. Bake for 11-12 min. Let cool on baking sheet.

Tips:

  • To ensure the best flavor, use fresh, ripe cherries. If fresh cherries are not available, frozen cherries can be used instead. Just be sure to thaw them completely before using.
  • If you don't have sweetened coconut flakes, you can make your own by toasting unsweetened coconut flakes in a preheated 350°F oven for 5-7 minutes, or until golden brown.
  • To save time, you can use a cookie scoop to drop the dough onto the baking sheet. This will help to ensure that the cookies are all the same size and shape.
  • Be sure to chill the dough for at least 30 minutes before baking. This will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies until they are just set around the edges but still soft in the center. Overbaking will make the cookies dry and crumbly.

Conclusion:

Cherry coconut cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their chewy texture, sweet cherry flavor, and coconutty crunch, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give these cherry coconut cookies a try. You won't be disappointed!
