CHERRY COBBLER (FROZEN CHERRIES)

Cherry Cobbler (Frozen Cherries) image

This recipe uses frozen cherries, so it's great to make all year round! This is a sweet cobbler you can reduce the sugar slightly for a less sweeter taste. Although I have never tried it, I imagine that you could also make this using frozen or fresh blueberries.

Time 50m

Number Of Ingredients 14

5-6 cups sweet cherries, pitted (fresh or frozen thawed (see note))
¼ cup granulated sugar
1 tablespoon freshly squeezed lemon juice
1 teaspoon pure vanilla extract
¼ teaspoon almond extract
2 tablespoons all purpose flour OR 3 tablespoons if using frozen cherries
⅔ cup granulated sugar
¾ cup all purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¾ teaspoon pure vanilla extract
½ teaspoon almond extract
6 tablespoons unsalted butter, melted
vanilla ice cream (for serving)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, gently stir together all filling ingredients (make sure you read the notes regarding fresh vs frozen cherries). Transfer to an 8x8 baking pan and spread into an even layer.
  • In a medium bowl, combine sugar, flour, baking powder, and salt. Add the vanilla extract, almond extract, and melted butter and stir until fully combined. The mixture will resemble a cross between a crumb topping and a sugar cookie dough.
  • Press pieces of the topping together with your fingers to form flat irregular shaped pieces. Place the pieces of topping all over the top of the cherries. Bake for 30-45 minutes, until the cherries are bubbling around the edges and the topping is light golden brown. Place the pan on a wire rack to cool for about 20 minutes. The juices will thicken up a bit as it cools.

Tips:

  • Use a variety of cherries. This will give your cobbler a more complex flavor. Fresh, frozen, or canned cherries can be used.
  • Pit the cherries before using them. This is easiest to do with a cherry pitter, but you can also use a paring knife.
  • Sweeten the cherries to taste. You can use sugar, honey, or maple syrup.
  • Add some spices to the cherries. Cinnamon, nutmeg, and allspice are all good choices.
  • Use a biscuit or pie crust mix to make the cobbler topping. This is the easiest option, but you can also make your own crust from scratch.
  • Bake the cobbler until the crust is golden brown and the cherries are bubbling. This usually takes about 30 minutes.
  • Serve the cobbler warm with a scoop of vanilla ice cream or whipped cream.

Conclusion:

Cherry cobbler is a classic dessert that is easy to make and always a crowd-pleaser. With its sweet and tart cherries, buttery crust, and creamy ice cream, it's the perfect way to end a meal. So next time you're looking for a delicious and easy dessert, give cherry cobbler a try. You won't be disappointed!
