1 cup light brown sugar, packed
1 large egg
2 teaspoons vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt, optional
3/4 to 1 cup semi-sweet chocolate chips
1 cup cherries (fresh or frozen)*

Steps:

  • Preheat oven to 350F. Line an 8-by-8-inch pan with aluminum foil, spray with cooking spray; set aside.
  • In a medium microwave-safe bowl, melt the butter, about 60 seconds.
  • To the melted butter, add the brown sugar and stir to combine.
  • Add the egg, vanilla, and stir to combine. Add the flour, salt, and stir until just combined, taking care not to over mix or the blondies will be tough.
  • Fold in chocolate chips, fruit (I don't halve the cherries: I like them chunky and big), and pour batter into prepared pan, smoothing it lightly with a spatula or offset knife if necessary.

1 teaspoon unsalted butter
2 cups all-purpose flour
1 teaspoon kosher salt
1 teaspoon baking powder
½ teaspoon baking soda
½ cup unsalted butter, softened
1 cup white sugar
2 large eggs, at room temperature
¼ cup plain yogurt
¼ teaspoon vanilla extract
2 cups pitted cherries
½ cup dark chocolate chunks
½ cup chopped walnuts
¼ cup powdered sugar
3 teaspoons milk, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
  • Whisk flour, salt, baking powder, and baking soda together in a bowl.
  • Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.

1 jar(s) 10 oz maraschino cherries
1 12 oz bag semisweet chocolate chips (2 cups)
1/2 c butter or margarine
1 c granulated sugar
1 1/4 c all-purpose flour
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp salt
3 eggs, beaten
1 11.5 oz bag semisweet chocolate chunks (2 cups)
CHERRY DRIZZLE
1/2 c powdered sugar
3 to 5 tsp reserved maraschino cherry liquid

Steps:

  • 1. Heat oven to 350 degrees. Drain cherries well, reserving liquid for the Cherry Drizzle. Cut cherries in half; set aside.
  • 2. Melt chocolate chips and butter in 3-quart saucepan over low heat, stirring constantly; remove from heat.
  • 3. Stir in sugar, flour, vanilla, baking powder,salt and eggs. Stir in cherries and chocolate chunks.
  • 4. Spread dough in ungreased rectangular 9x13 pan. Bake 32 to 37 minutes or until center is set. Cool completely, about 1 hour.
  • 5. Make Cherry Drizzle. Mix powdered sugar and cherry liquid in small bowl with spoon until smooth. Number of drops of liquid used depends on how thick you want the drizzle to be...more like a glaze or more like a frosting!
  • 6. Place Cherry Drizzle in resealable plastic food storage bag. Cut off tip of bag. Squeeze drizzle in desired pattern on top of brownies. Cut into 6 rows by 4 rows.

1 cup toasted almonds, coarsely chopped
1/2 cup dried cherries, coarsely chopped
6 ounces dark chocolate, finely chopped

Steps:

  • In a medium bowl, toss together the almonds and the cherries. Line a baking sheet with waxed paper.
  • Melt half the chocolate in the top of a double boiler over slightly simmering water, over the lowest possible heat, stirring frequently. Make sure the water is not touching the top pan. Remove the double boiler from the heat and stir in the rest of the chocolate. Remove the top pan with the chocolate in it, gently wipe the bottom of it and set it aside for a moment. Replace the simmering water in the bottom pan with warm tap water. Put the pan of melted chocolate on top of the warm water. This will keep the chocolate at the right temperature while you make the clusters.
  • Stir the fruit-nut mixture into the chocolate. Spoon out heaping tablespoon-sized clusters of the chocolate mixture onto the baking sheet about 1-inch apart. Put them in the refrigerator to set for 15 minutes. Store and serve at room temperature.
