1 package of sugar cookie mix
1/2 cup butter
1 egg
2 tablespoons unbleached flour
1 package 8 ounces of cream cheese, softened
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
1 can of cherry pie filling about 1 cup
1/2 cup graham cracker crumbs
1 tablespoon light brown sugar

Steps:

  • Preheat the oven to 350 degrees and line a cookie sheet with parchment paper.
  • Combine sugar cookie mix, softened butter, and egg in a medium-sized mixing bowl and mix well.
  • Add 2 tablespoons of flour and mix until a soft dough forms (dough will be crumbly).

1/4 cup granulated sugar

THE CRUST
1 lb pillsbury sugar cookie dough
THE FILLING
32 oz cream cheese, softened
4 eggs
2 Tbsp vanilla extract
1 c sugar
1 can(s) pie filling for topping (cherry,strawberry, raspberry, etc.)

Steps:

  • 1. Press the cookie dough into an 8 inch springform pan and bake at 350 about 15 minutes until almost done.
  • 2. Let cool.
  • 3. Meanwhile, beat cream cheese and sugar.

1 cup graham cracker crumbs (see note)
3 (20 ounce) cans cherry pie filling, drained

Steps:

  • MAKE DOUGH Combine flour, baking powder, and salt in bowl. With electric mixer on medium-high speed, beat cream cheese, butter, and sugar until smooth and creamy, about 2 minutes. Add eggs and vanilla and mix until incorporated. Reduce speed to low, add flour mixture, and mix until just combined. Refrigerate dough until firm, at least 30 minutes.
