This is a delicious pie filling. It's also a great recipe if you have a helper. If any juice bubbles over, it tastes really good on top of ice cream.

FRESH CHERRY PIE
If you're looking to learn how to make a cherry pie, this recipe is the place to start. This ruby-red cherry pie is just sweet enough, with a hint of almond flavor and a good level of cinnamon. The cherries peeking out of the lattice crust makes it so pretty, too. I like to make a few of these cherry pies throughout the summer. -Josie Bochek, Sturgeon Bay, Wisconsin

Tips:
- Prep Your Cherries: Before you start, make sure to wash and pit your cherries. If you're using frozen cherries, thaw them first and drain off any excess liquid.
- Simmer the Cherries: Simmering the cherries in a mixture of sugar, cornstarch, lemon juice, and almond extract enhances their flavor and thickens the filling. Bring the mixture to a gentle boil, then reduce heat and simmer for 5-7 minutes, stirring often.
- Let the Filling Cool: Allow the cherry filling to cool completely before assembling the pie. This will help prevent the filling from being too runny and seeping out of the pie crust.
- Use Chilled Butter: When making the pie crust, use chilled butter. This will help keep the crust flaky and prevent it from becoming greasy.
- Crimp the Edges: To seal the pie crust, crimp the edges together using a fork or your fingers. This will help prevent the filling from leaking out during baking.
- Chill the Pie: Before baking, chill the pie for at least 30 minutes. This will help the crust set and prevent it from becoming too soft.
- Bake Until Golden Brown: Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling. Let the pie cool for at least 15 minutes before serving.
Conclusion:
The Cherry Breeze Pie is a delightful summer treat that's perfect for any occasion. With its flaky crust, sweet and tart cherry filling, and refreshing almond flavor, this pie is sure to be a hit. Follow these tips to ensure your pie turns out perfect every time. Serve it chilled or at room temperature, topped with a scoop of vanilla ice cream or whipped cream for an extra special treat.
