CHERRY-APPLE LOAF

Cherry-Apple Loaf image

This is a very old recipe cut out of the paper by my Mom many years ago. I think it is very different from any other bread I have seen. I like to make a confectioner's sugar and milk glaze with some cherry juice over the loaf.

Time 1h

Number Of Ingredients 12

6 Tbsp butter or margarine
2 eggs
1 c applesauce
2 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
2/3 c granulated sugar
1 tsp grated lemon peel
2 Tbsp milk
1/2 tsp salt
1/2 c chopped nuts
1/4 c chopped maraschino cherries

Steps:

  • 1. Heat oven to 350 df grease an 8 1/2 x 4 1/2 x 3 loaf pan
  • 2. Cream butter and sugar til fluffy. Add eggs one at a time, beating after each. Add grated lemon peel.
  • 3. Combine applesauce and milk. Sift dry ingredients together. Add alternately with applesauce mixture to creamed mixture.
  • 4. Stir in nut and cherries. Pour into greased loaf dish.
  • 5. Bake at 350 degrees about 45-50 minutes or until done. Remove from pan and cool thoroughly.

Tips:

  • For a sweeter loaf, use ripe, sweet cherries. If your cherries are tart, you may want to add an extra tablespoon of sugar to the batter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk. Let it sit for 5 minutes before using.
  • Be careful not to overmix the batter. Overmixing can make the loaf tough.
  • Bake the loaf until a toothpick inserted into the center comes out clean. The loaf should be golden brown on top.
  • Let the loaf cool completely before slicing and serving.

Conclusion:

This cherry apple loaf is a delicious and easy-to-make treat that is perfect for any occasion. The combination of sweet cherries, tart apples, and warm spices makes this loaf irresistible. Whether you enjoy it for breakfast, lunch, or a snack, this loaf is sure to be a hit.
