1 cup rolled oats, gluten free if needed
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
3 tablespoons maple syrup
1 tablespoon melted coconut oil
1/4 teaspoon vanilla extract
1/4 cup sliced almonds
3 tablespoons unsweetened shredded or flaked coconut
2 cups pitted cherries, fresh or frozen (defrosted)
1 tablespoon maple syrup
Pinch of salt
1-2 tablespoons water
1/4 teaspoon almond extract or 1 tablespoon amaretto
2 cups plain Greek yogurt
1 tablespoon maple syrup, more for a sweeter yogurt
Chopped dark chocolate (optional)

Steps:

  • Preheat oven to 350° F. and line a baking sheet with parchment paper.
  • In a large bowl whisk together the melted coconut oil, maple syrup and vanilla extract. Add in the oats, cinnamon and salt and stir everything together until coated. Pour the oats out onto the baking sheet and spread them into a single layer.
  • Bake for 10 minutes then remove from the oven, toss and add in the almonds. Bake for another 5 minutes then remove and add in the coconut. 1/3 cup unsalted pepitas (hulled green pumpkin seeds)

1/2 cup packed light brown sugar
1/3 cup maple syrup
1/3 cup extra-virgin olive oil
3/4 cup dried sour cherries

Steps:

6 tablespoons coconut oil, melted

1 teaspoon vanilla extract
1 teaspoon ground cinnamon

1 quart plain yogurt, for serving

1 quart whole-fat Greek yogurt
2 tablespoons confectioners' sugar
1/2 teaspoon kosher salt, optional
