Tips:

  • Use fresh, ripe cherries and apricots for the best flavor. If using frozen fruit, thaw it completely before using.
  • If you don't have a 9x13 inch baking dish, you can use two smaller dishes, such as two 8x8 inch dishes.
  • Be sure to coat the fruit with sugar and cornstarch before adding it to the baking dish. This will help to thicken the filling and prevent it from being too runny.
  • Don't overmix the batter. Overmixing can make the cobbler tough.
  • Bake the cobbler until the filling is bubbling and the crust is golden brown. This usually takes about 45-50 minutes.
  • Serve the cobbler warm with a scoop of ice cream or whipped cream.
