CHERRY DUMPLINGS

Cherry Dumplings image

I can't remember where I got this - probably on an internet search when we had ripe cherries and I wanted to make something other than cherry pie. I've also made this in the dead of winter using a bag of mixed berries. I added the almond extract and cinnamon to the original recipe.

Provided by Penny Burdge

Categories     Fruit Desserts

Time 35m

Number Of Ingredients 13

2 c sour cherries
3/4 c sugar
1/2 tsp almond extract
1/2 tsp ground cinnamon
2 Tbsp butter
DUMPLING DOUGH INGREDIENTS
1 c flour
2 tsp baking powder
pinch salt (a pinch is about 1/8 tsp.)
3 Tbsp crisco
1 large egg
1 tsp pure vanilla extract
1/2 c milk

Steps:

  • 1. Mix the cherries, sugar, cinnamon and almond extract in a deep pot that has a lid. Bring the mixture to a simmer over med heat.
  • 2. In a large bowl whisk together the flour, baking soda and salt. Cut in 3 tablespoons Crisco until the mixture is crumbly
  • 3. Beat together the egg, vanilla extract and milk. Stir GENTLY into the dry ingredients just until incorporated.
  • 4. Drop the dough by a spoon onto the bubbling cherry mixture. Cook 10 minutes without the lid. Cover the pan and cook 10 minutes more.

Tips:

  • Choose ripe, sweet cherries. This will ensure that your dumplings are bursting with flavor.
  • Don't overmix the dumpling batter. Overmixing will make the dumplings tough.
  • Make sure the dumplings are cooked through before serving. You can check this by inserting a toothpick into the center of a dumpling. If the toothpick comes out clean, the dumpling is cooked.
  • Serve the dumplings warm with a scoop of vanilla ice cream or whipped cream. This will make them even more delicious.

Conclusion:

Cherries with cinnamon dumplings are a classic dessert that is sure to please everyone at your table. They are easy to make and can be made with fresh or frozen cherries. The dumplings are light and fluffy, and the cherries are sweet and tart. This dessert is perfect for any occasion, from a casual weeknight meal to a special holiday dinner.
