Time 3h30m

Yield 6

Number Of Ingredients 9

1 tablespoon vegetable oil
3 ½ pounds beef chuck pot roast
2 teaspoons salt
1 teaspoon ground black pepper
1 cup diced carrots
1 cup diced celery
1 cup diced onion
¼ cup butter
1 teaspoon dried rosemary

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Pour vegetable oil into a large oven-safe pot over medium-high heat. Season the chuck roast with salt and black pepper. Brown the meat on both sides in the hot oil, and transfer to a plate.
  • Stir carrots, celery, and onion into the pot, and cook and stir until vegetables start to release their juices, about 3 minutes; loosen any brown flavor bits on the bottom of the pot. Add butter, and cook until the onions are translucent, about 5 minutes. Then sprinkle in rosemary, stir the vegetables, and return the roast to the pot. Cover the pot with a lid.
  • Roast in the preheated oven until the chuck roast is tender, about 2 1/2 to 3 hours. Season vegetables with additional salt and black pepper, if desired.

CHEF JOHN'S POT ROAST

Categories     Beef

Number Of Ingredients 14

2 tbsp vegetable oil
salt and pepper to taste
AP flour as needed
1 "7-bone" beef pot roast (about 5 pounds)
8 oz sliced mushrooms
1 onion, chopped
2 cloves garlic, minced
1 tbsp butter
1 1/2 tbsp flour
1 tbsp tomato paste
2 1/2 cups chicken broth
3 carrots, cut in chunks
2 ribs celery, cut in chunks
a few springs of rosemary and thyme

Steps:

  • Season meat with salt & pepper; sprinkle on flour and "spank" into meat. Shake excess. Sear roast in vegetable oil (med/hi heat) until browned on both sides. Remove roast, reduce to medium heat and add thickly sliced mushrooms with butter and sauté. Once lightly browned add roughly chopped onion. Cook together until translucent. Add chopped garlic & cook another minute. Add the 1 ½ T flour to help thicken gravy. Then add tomato paste and caramelize. Add stock (chicken broth) and return to simmer. Remove from heat. Place carrots and celery in the bottom of the slow cooker. Add meat, herbs, onion/mushroom mixture and "poke" down. High heat for 5-6 hours or until fork tender. Check every couple of hours and poke it down, remove bones, skim fat that rises to the top. Serve over mashed potatoes.

Tips:

  • Sear the meat before braising: This will help develop a rich, flavorful crust and lock in the juices.
  • Use a good quality Dutch oven or braising pan: This will help distribute the heat evenly and prevent the meat from sticking.
  • Add plenty of vegetables: Vegetables add flavor, nutrition, and help to create a rich, flavorful sauce.
  • Use a flavorful liquid: Beef broth, red wine, or even beer can all be used to add flavor to the pot roast.
  • Cook the pot roast low and slow: This will help to tenderize the meat and develop the flavors.
  • Don't be afraid to experiment: There are many different ways to make pot roast, so feel free to adjust the ingredients and cooking method to suit your own taste.

Conclusion:

Pot roast is a classic comfort food that is easy to make and always a crowd-pleaser. With a little planning and preparation, you can make a delicious pot roast that your family and friends will love. So next time you're looking for a hearty and flavorful meal, give pot roast a try.
