CHEF JOHN'S APPLE DUMPLINGS
This is one of America's oldest desserts. The flavor profile is almost identical to an apple pie, but instead of having a bunch of slices about, we have one beautifully roasted, tender, sweet apple inside--which while still covered in the same crust we use for a pie, is far superior because we basted and baked it with a sugar sauce. I highly recommend these get served with a scoop of vanilla ice cream.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Butter a baking dish.
- Combine brown sugar, 3 tablespoons butter, and water in a small pot over medium-high heat. Bring to a boil, stirring occasionally, and boil until all sugar is dissolved. Turn off heat and swirl pot gently to combine. Reserve sauce until needed.
- Stir sugar and cinnamon together in a small bowl. Core the unpeeled apples.
- Divide pie dough into 4 portions. Roll out on a lightly floured surface into 4 circles about 1/8-inch thick and 7 inches in diameter, or large enough to fully wrap an apple.
- Place apples in the center of each round of dough. Spoon about 3 teaspoons of cinnamon sugar into the apple cores; fill each hole with a teaspoon of butter.
- Wrap each apple up in pie dough, sealing the dough together at the top. Be careful not to pull and stretch it too tightly around the apple as you wrap, or it might break apart when it bakes; brush lightly with water if dough won't stick together. Even out the top and trim off any excess; shape into decorative leaves if desired.
- Place wrapped apples seam-side up into the buttered baking dish. Ladle some sauce over each to cover completely.
- Bake in the preheated oven, basting with sauce occasionally, until pastry is browned and cooked through and apples are tender, 50 to 60 minutes. Remove from the oven and baste with more sauce. Serve warm.

Steps:
- 1. PREPARE APPLES: Peel and core 4 medium Granny Smith apples. I do this by hand with a sharp paring knife by making a hole in the center of the apple and removing the seeds. Set aside.
- 2. Pre-heat the oven to 400 degrees. You will need a buttered. 8 inch glass baking dish.
- 3. MAKE THE SYRUP: In a small sauce pan, combine sugar, water, butter and cinnamon, and heat to boiling, then simmer for 10 minutes on very low heat. Meanwhile,
- 4. MAKE THE FILLING: Combine 1/2 cup of sugar with 1/2 teaspoon of cinnamon.
- 5. ROLL THE DOUGH: It will take 2 pie crusts for four dumplings. I roll the dough a little thinner than the crust. Make a square of dough, place the apple in the center of it so that when you bring up two corners of the square, the ends touch. Cut away any excess dough. Fill the center of the apple while it is on the dough with 2 teaspoons of the sugar filling. Top with one teaspoon of butter, bring two ends up around the apple and pinch to close, then bring the other two ends up and pinch to close, pinch the sides and seal so there is no crack anyplace. It should look like my photo of apple dumplings. You may have to "patch" the dough when you roll it for the second dumpling, but as long as it is sealed, that is okay. Finish sealing all the apples in the dough.
- 6. Place the apple dumplings in the dish, don't let the sides touch, about 1/2 inch apart. Pour the syrup carefully AROUND not OVER the apple dumplings.
- 7. Bake in the 400 degree oven for 1 hour until dumplings are lightly browned. Serve in a shallow dish with a couple spoons of the syrup around the bottom of the apple, and a big dollop of whipped cream or lite cool whip! Enjoy!
OLD-FASHIONED APPLE DUMPLINGS
These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

Steps:
- Place chicken in a Dutch oven. Add water, carrot, celery, onion, 3 sprigs of thyme, and bay leaf. Bring to a boil, cover, reduce heat to low, and simmer for 1 hour. Remove chicken from dutch oven and transfer to a bowl; set aside to cool.
- Increase heat and bring the stock to a simmer. Skim off any chicken fat that appears on top of the stock and reserve in a bowl. Combine 2 to 3 tablespoons of the reserved fat with flour in a small bowl; stir to make a paste, adding more flour if needed. Add the chicken fat and flour mixture to the stock. Reduce heat and simmer for 15 minutes.
- Remove chicken meat from the carcass and add to the stock. Season with salt, black pepper, and cayenne pepper to taste. Continue simmering for 10 to 15 minutes.
- Whisk creme fraiche, milk, 2 teaspoons of thyme leaves, and eggs together in a large bowl. Stir in self-rising flour until almost entirely incorporated; do not overmix.
- Scoop large dollops of dumpling mixture on top of the chicken stock. Increase heat slightly to medium-high. Cover and simmer until dumplings appear light and fluffy, and a toothpick inserted into the center comes out clean, 10 to 15 minutes. Serve garnish with thyme sprigs.

Tips:
- Select the Right Apples: Choose firm, tart apples that hold their shape well during baking. Granny Smith, Honeycrisp, and Braeburn are excellent options.
- Prepare the Apples Properly: Peel and core the apples, then cut them into uniform slices or wedges. This ensures even cooking and prevents the apples from falling apart.
- Make a Flavorful Filling: Combine the apple slices with sugar, cinnamon, nutmeg, and butter. You can also add other spices like ginger or cardamom for extra flavor.
- Create a Sturdy Dough: Use a combination of all-purpose flour, butter, and a touch of salt to make a flaky and tender dough. Work the dough until it just comes together, avoiding overworking it.
- Assemble the Dumplings: Place a spoonful of the apple filling in the center of a dough circle. Fold the dough up around the filling, pleating the edges to seal it. Make sure there are no gaps where the filling can leak out.
- Bake until Golden Brown: Place the dumplings in a baking dish and brush them with melted butter. Bake in a preheated oven until the dumplings are golden brown and the filling is bubbling, about 30-35 minutes.
- Serve Warm: Apple dumplings are best served warm, straight out of the oven. Top them with vanilla ice cream, whipped cream, or caramel sauce for an extra special treat.
Conclusion:
Chef John's Apple Dumplings are a classic dessert that combines the flavors of sweet apples, warm spices, and flaky dough. With careful preparation and attention to detail, you can create these delightful dumplings at home. They are perfect for a special occasion or a cozy family gathering. Serve them warm with your favorite toppings and enjoy the taste of homemade comfort food at its best.
