CHEF JOEY'S HAUPAI
I found the original recipe for Haupai at Recipezaar, but decided (as I usually do) to tweak it and make it my own. All these ingredients can be found in any good health food market. I prefer the lite coconut milk as it's got fewer calories. I have made this a few times. When I make it in a pie I sometimes also use this recipe: http://www.recipezaar.com/Almond-Crumb-Crust-303089 and it goes very well with this pie.

Steps:
- Prepare the vanilla wafers by putting them into a large plastic zipper bag and crush them into fine crumbs.
- Melt the vegan margarine and add it to the vanilla wafer crumbs. Combine the wafers and margarine and then layer the crumb mixture evenly in the bottom of an 8x8 inch pan.
- Bake at 375°F for 8 minutes. Cool completely before adding the pudding.
- TO MAKE THE FILLING.
- Put the lite coconut milk into one quart saucepan. Mix it up with a whisk.
- In a separate bowl combine the sugar and arrowroot and mix, add the water and mix really well to ensure the sugar is dissolved.
- Stir the sugar, arrowroot and water mixture into the coconut milk. Heat on med low until thickened. Then add the vanilla and lemon extracts. Mix well.
- Put the slices of banana on the cooled vanilla wafer crust and then pour the coconut pudding on top.
- Sprinkle with the desired amount of coconut flakes. You can toast these if you like.
- Sprinkle with Five Spice Powder.
- Enjoy!

This is a different way to serve Lima beans. They sort of remind me of Boston baked beans. I used organic Lima beans my husband grew in our garden. The sour cream goes in at the end.

- Make sure the Lima beans have been cleaned, rinsed and drained.
- Combine the water, margarine, molasses, mustard, and salt in the bowl of a 2.5 to 3-quart crock pot. Stir all together. Add in the Lima beans and stir again to coat.
- Cover and cook for 8 hours on low or 6 hours on high.
- Stir the beans often during the cooking process. After 8 hours on low check the beans to make sure they are soft. Stir in the sour cream and serve.

- Prepare the pastry by placing the flour in the bowl of a food processor. Give it a pulse to fluff it up. Add the cut up margarine and pulse again.
- Add the cold vegan cream cheese. I use Tofutti Better Than Cream Cheese in this.
- Pulse the flour, margarine and cheese mixture until a ball forms and then remove. Form into a disc. Cut in half and wrap each disc in plastic wrap. Refrigerate for one to 24 hours.
- Once the pastry is chilled, preheat your oven to 350'F. Line two cookie sheets with parchment paper and set aside.
- Put your jam into a small bowl and stir it to get any lumps out of it.
- Once the oven is heated up, roast your nuts. I did mine at 350 for 7-10 minutes. Keep an eye on them so they don't burn.
- Remove the nuts and set aside until cool. Add them along with your lemon zest and sugar into the bowl of a small food chopper and process until the nuts are about 1/3 their original size.
- Set this aside.
- Remove one of your pastry discs from the fridge. Lightly flour your counter top and roll the pastry out to a large circle. Make the dough very thin as it will crisp up much better if you do.
- Spread the jam on the pastry, then sprinkle 1/2 the nut mixture. Cut the rolled out pastry in 4 equal sections, then cut each of the 4 sections into 3 equal sections.
- Roll from the outside in and place with seam side down on your covered cookie sheet.
- Brush with the soy creamer and sprinkle with some sugar.
- Bake for about 20 minutes. Keep an eye on these, they can burn easily.
- Cool on a metal cookie rack.
- Repeat with the second batch of cookies.
- You can also sprinkle other sugars on these, icing, or fruit might be nice.

- Stir chicken, water chestnuts, mushrooms, yellow onion, 1/3 cup green onion, 1 tablespoon soy sauce, ginger, and 2 teaspoons brown sugar together in a bowl. Pat mixture down, cover the bowl with plastic wrap, and refrigerate until ready to use.
- Whisk chicken stock, rice wine vinegar, garlic, ketchup, 1 tablespoon soy sauce, sesame oil, 2 teaspoons brown sugar, red pepper flakes, and dry mustard together in a bowl until glaze is well-mixed.
