2 tablespoons butter
2 tablespoons all-purpose flour
1 1/4 cups milk
Kosher salt and freshly-ground black pepper
2 cup shredded Gruyere
1/2 cup shredded Parmesan

  • Bake, uncovered for 20 to 30 minutes until golden and bubbly.

CAULIFLOWER GRATIN WITH LEEKS AND WHITE CHEDDAR

Cauliflower Gratin With Leeks and White Cheddar image

A sort of cheater's gratin, this cauliflower cooked with leeks and cream doesn't require blanching or a béchamel, making it a low maintenance, deeply comforting side dish. To skirt the blanching, the cauliflower and cream is covered in foil to give the vegetables a chance to get tender without drying out. The foil then comes off so the top can brown and the cream can reduce, creating a thick, velvety sauce. If your heart desires a crunchier texture, add a scattering of bread crumbs tossed in olive oil and seasoned with salt and pepper when the aluminum foil comes off.

Categories     vegetables, side dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 6

1 small-ish head cauliflower (about 2 pounds), green leaves removed
Olive oil, for drizzling
1 small leek, white and light green part only, very thinly sliced
Kosher salt and black pepper
¾ cup heavy cream
6 ounces sharp white Cheddar, grated (about 1 1/2 cups)

Steps:

  • Heat oven to 425 degrees. Slice cauliflower head lengthwise into 1/2-inch thick slices, including the core and leaves. (Some smaller bits will fall away: That's fine. You'll use them as well.)
  • Drizzle some olive oil onto the bottom of a 2-quart baking dish. (An oval, square or rectangular dish will all work.) Layer about a third of the cauliflower along the bottom, and about a third of the leeks. Season with salt and pepper, and repeat until all of the cauliflower and leeks are used. (Don't worry about perfectly layering them.) Season with salt and pepper and drizzle cream over. Scatter cheese on top, and season again with salt and pepper. Lightly cover with foil and place in the oven.
  • Bake until cauliflower is nearly tender, 10 to 15 minutes. Remove foil and continue to bake until cream has thickened and reduced nearly completely and the top is golden brown and crisp, 35 to 40 minutes. Remove from oven and let cool slightly before eating.

TRUFFLED CAULIFLOWER GRATIN

Truffled Cauliflower Gratin image

In this otherwise humble gratin, we're going to use another, much more delicious delivery system of truffles: truffle pecorino cheese. For less than $10 worth of cheese, I think you can get a nicer, truer truffle flavor. By the way, if you know they actually make this cheese with synthetic truffle oil, please keep it to yourself, and don't spoil it for me.

Categories     Side Dish     Vegetables     Cauliflower

Time 1h

Yield 8

Number Of Ingredients 12

7 tablespoons butter, divided
½ cup all-purpose flour
3 cups milk
5 ounces truffled pecorino cheese, grated, or more to taste
1 teaspoon salt, or to taste
1 pinch cayenne pepper, or more to taste
1 pinch ground nutmeg
1 large head cauliflower, cored and separated into florets
2 tablespoons bread crumbs
2 tablespoons finely grated Parmigiano-Reggiano cheese, or more to taste
1 tablespoon extra-virgin olive oil
1 tablespoon chopped fresh chives, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Butter a 9x13-inch baking dish with 1 tablespoon butter.

Tips:

  • Choose the right cauliflower: For the best results, select a head of cauliflower that is firm and heavy for its size, with tightly packed florets. Avoid heads with any signs of bruising or wilting.
  • Cut the cauliflower into even florets: This will help them cook evenly. Aim for florets that are about 1-2 inches in size.
  • Blanch the cauliflower florets: Blanching helps to remove any bitterness from the cauliflower and also helps it retain its vibrant color. To blanch the cauliflower, bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 2-3 minutes, or until they are tender-crisp. Drain the cauliflower florets and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Make a flavorful béchamel sauce: The béchamel sauce is what gives this gratin its rich and creamy texture. To make the béchamel sauce, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes, or until the mixture is golden brown. Slowly whisk in milk, a little at a time, until the sauce is smooth and thick. Season the sauce with salt, pepper, and nutmeg.
  • Layer the cauliflower and béchamel sauce in a baking dish: Start by placing a layer of cauliflower florets in the bottom of a greased baking dish. Top with a layer of béchamel sauce. Repeat the layers until all of the cauliflower and béchamel sauce have been used. Sprinkle the top with grated Parmesan cheese.
  • Bake the gratin in the oven until golden brown: Bake the gratin in a preheated oven at 375°F for 25-30 minutes, or until the top is golden brown and bubbly and the cauliflower is tender.

Conclusion:

Chef Comerford's cauliflower gratin is a delicious and easy-to-make dish that is perfect for a weeknight meal or a special occasion. With its creamy béchamel sauce, tender cauliflower, and crispy Parmesan cheese topping, this gratin is sure to be a hit with everyone who tries it. So next time you're looking for a new and exciting way to prepare cauliflower, give this gratin a try. You won't be disappointed!
