Steps:
- 1. Preheat oven to 425 degrees f. Line a baking sheet with parchment paper.
- 2. On a box grater or in a food processor, grate zucchini. Using cheesecloth or a dish towel, wring excess moisture out of zucchini.
- 3. Transfer zucchini to a large bowl with eggs, garlic, oregano, 2.5 Cup of the Mozzarella, Parmesan, corn starch, and season with salt and pepper. Stir until completely combined.
- 4. Transfer "dough" to prepared baking sheet and pat into a crust. Bake until golden and dried out, about 35 minutes.
- 5. Sprinkle with remaining mozzarella & crushed red pepper flakes (optional) Bake until cheese is melted, approx. 5-10 minutes more.
- 6. Slice & Serve with marinara sauce for dipping. Enjoy!
Tips:
- Use room temperature ingredients: This will help the batter come together more smoothly and evenly.
- Don't overmix the batter: Overmixing can make the bread tough.
- Grate the zucchini finely: This will help the zucchini distribute evenly throughout the bread.
- Use a loaf pan that is at least 9x5 inches: A smaller pan will make the bread too thick and dense.
- Bake the bread until a toothpick inserted into the center comes out clean: This will ensure that the bread is cooked through.
Conclusion:
Cheesy zucchini bread is a delicious and versatile quick bread that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover zucchini. With its moist texture, cheesy flavor, and hints of zucchini, this bread is sure to be a hit with everyone who tries it. So next time you have a zucchini on hand, give this recipe a try!
