1 package (6.2 ounces) fast-cooking long grain and wild rice mix
4 cups 2% milk
1 can (10-3/4 ounces) condensed cream of potato soup, undiluted
8 ounces Velveeta, cubed
1/2 pound bacon strips, cooked and crumbled
Optional: Minced chives and oyster crackers

Steps:

  • In a large saucepan, prepare rice mix according to package directions. Add the milk, soup and cheese. Cook and stir until cheese is melted. Garnish with bacon and, if desired, minced fresh chives and oyster crackers.

1 lb chicken, cubed
1 medium onion, diced
1/2 cup mushroom, slices
3 cups wild rice
8 slices bacon, cooked and crumbled
1 1/2 cups cubed Velveeta cheese
2 (10 1/2 ounce) cans cream of potato soup
2 cups milk

Steps:

  • Start by cooking chicken, onions, & mushrooms in pot until chicken is cooked through and onions and mushrooms are soft.
  • Next add crubled bacon and wild rice (I like to use 2 cans of wild rice but you can buy the boxed kind too and prepare it ahead of time)
  • Add both cans of cream of potato soup, milk, and Velveeta. Stir all ingredients until mixed well.
  • Heat on medium until cheese is melted and everything is blended.
  • Season to taste ( I like to just add pepper since the Velveeta makes it a little salty already)
  • Turn to low and let simmer for a while, stirring frequently.

2 cans cream of chicken soup(mo meat cream soup may be used)
1 reg. size can of evaporated milk
l can of reg. milk(any from whole to skim)
l cup of cooked wild rice(see above)
l cup of grated cheese
l cup of smoked turkey or ham

  • Put canned soup in kettle, add milks, stir. When smooth, add cheese and meat. Cook on low heat until cheese is melted. Add wild rice and meat(opt) Heat until mixture is warm. Serve. OPT. Cut the top out and take part of the center out of large hard rolls. Serve soup inside rolls
