CHEESY VEGETABLE RICE CASSEROLE

Cheesy Vegetable Rice Casserole image

My husband was craving something "cheesy and vegetable-y" so we threw some stuff in a pan and ended up with this. It turned out to be the most cheesy, creamy casserole I've ever had and it was fantastic. This is definitely a staple in our home now. We've done a version with just vegetables and a version with chicken.

Time 35m

Yield 10-12 serving(s)

Number Of Ingredients 6

4 lbs frozen vegetables
2 cups Minute Rice
4 -8 ounces heavy cream or 4 -8 ounces half-and-half
1 cup sour cream
1 1/2 lbs Velveeta cheese, thickly sliced (or similar)
2 -3 chicken breasts, cubed (optional)

Steps:

  • Choose frozen veggies such as broccoli, cauliflower, brussel sprouts, etc.
  • Boil veggies until close to tenderness you prefer.
  • Prepare minute rice.
  • In large baking dish (we used 9x11x4), mix veggies, rice, whipping cream and sour cream. If you're using chicken, mix in the cooked chicken now.
  • Arrange cheese pieces in a single layer on top of mixture.
  • Place baking dish in oven set to 400 degrees and cook until cheese is melted.
  • Remove dish and stir. Sprinkle shredded cheese on top and place back in oven until cheese is melted.
  • Remove from oven and serve.

CREAM CHEESY VEGETABLE CASSEROLE

Cream Cheesy Vegetable Casserole image

A Quick, easy casserole made with frozen vegetables, soup and cream cheese. There are lots of ways to alter this recipe by using alternate soups, vegetables, etc. (update 12/08) after reading the reviews that some chefs thought this dish was too soupy, I made it again using 2 packages of frozen veggies, it wasn't soupy at all, so I've edited the recipe from 1 pkg. to 2 packages of veggies. I think this will correct the problem.

Tips:

  • Choose fresh vegetables: Fresh vegetables will provide the best flavor and texture to your casserole. Try to use vegetables that are in season for the best quality.
  • Don't overcook the vegetables: Overcooked vegetables will become mushy and lose their flavor. Cook them just until they are tender-crisp.
  • Use a variety of cheeses: A variety of cheeses will give your casserole a more complex flavor. Try using a combination of hard, soft, and creamy cheeses.
  • Season the casserole well: Don't be afraid to use plenty of salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or dried herbs.
  • Top the casserole with a breadcrumb topping: A breadcrumb topping will add a crispy texture to your casserole. You can use plain breadcrumbs or add some grated Parmesan cheese or chopped nuts.
  • Let the casserole rest before serving: Let the casserole rest for 10-15 minutes before serving. This will allow the flavors to meld and the casserole to set.

Conclusion:

Cheesy vegetable casserole is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to get your daily dose of vegetables, and it's also a comforting and satisfying meal.
