1/2 cup diced celery
2 tbsp. sweet pickle relish
1/4 cup light mayonnaise
1 tsp. lemon juice
4 soft (6-inch) flour tortillas
1/2 cup shredded sharp cheddar cheese

Steps:

  • In a medium bowl, combine tuna, celery, relish, mayonnaise and lemon juice and mix well.
  • Spray small frying pan with non-stick cooking spray. Heat over medium low heat. Place tortilla in pan. Place 1/2 tuna mixture on one half of each tortilla and top with 1/4 cup cheddar cheese and top with second tortilla.
  • Cook for 1 - 2 minutes until tortilla begins to brown; flip tortilla and cook on second side until browned and cheese begins to bubble (approximately 1 - 2 minutes).

1 tablespoon minced green onion
2 tablespoons finely diced celery
2 teaspoons capers, drained
1 teaspoon Asian chile paste (such as sambal oelek)
2 tablespoons mayonnaise, or more to taste
⅓ cup fresh mozzarella cheese
salt and ground black pepper to taste
2 tablespoons softened butter, divided
2 thick slices French bread
¼ cup shredded sharp white Cheddar cheese, divided
1 pinch cayenne pepper, or to taste

Steps:

  • Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
  • Heat oven's broiler. Line a baking sheet with aluminum foil.
  • Spread butter generously on both sides of French bread slices.

2 (5-oz.) cans tuna packed in olive oil, drained
¼ cup mayonnaise, plus more for spreading
2 Tbsp. chopped celery
1 Tbsp. chopped dill pickles
Kosher salt, freshly ground pepper
8 slices sourdough bread
8 slices sharp cheddar
Dill pickle spears (for serving; optional)

Steps:

  • Combine ½ medium onion, thinly sliced, and 1 cup seasoned rice vinegar in a small bowl. Set aside.
  • Gently mix two 5-oz. cans tuna packed in olive oil, drained, ¼ cup mayonnaise, 2 Tbsp. chopped celery, and 1 Tbsp. chopped pickles in a medium bowl until just combined. Season with kosher salt and freshly ground pepper.

½ a bunch of spring onions , finely chopped
4 tbsp mayonnaise
3thick slices of granary or wholemeal bread
50g cheddar , coarsely grated
generous pinch of paprika
