1 (16 ounce) box rigatoni pasta
2 tablespoons extra-virgin olive oil
1 red onion, chopped
3 cloves fresh garlic, minced
1 garlic scape, minced
3 large heirloom tomatoes, stemmed
1 sweet pepper, chopped
1 cup chopped broccoli
3 baby bella mushrooms, chopped, or more to taste
1 (6 ounce) can tomato paste
1 teaspoon white sugar
8 fresh basil leaves
2 teaspoons Italian seasoning
½ teaspoon red pepper flakes

Tips:

  • Use ripe, juicy tomatoes: This will give your sauce the best flavor. If you can't find ripe tomatoes, you can roast them in the oven to concentrate their flavor.
  • Don't overcrowd the pan: When you're cooking the sauce, make sure you don't overcrowd the pan. This will prevent the sauce from cooking evenly.
  • Season the sauce to taste: Add salt, pepper, and other seasonings to taste. You can also add a pinch of sugar to balance out the acidity of the tomatoes.
  • Use a good quality cheese: The cheese is one of the most important ingredients in this dish, so make sure you use a good quality cheese that melts well. Parmesan, cheddar, and mozzarella are all good choices.
  • Cook the pasta al dente: This means that the pasta should be cooked through but still have a slight bite to it. This will prevent the pasta from becoming mushy when you add it to the sauce.

Conclusion:

This cheesy tomato pasta is a quick and easy meal that is perfect for a weeknight dinner. It's also a great way to use up leftover tomatoes. With just a few simple ingredients, you can create a delicious and satisfying meal that the whole family will love.
