Steps:
- In a hot skillet scramble fry the onion, minced beef and garlic - breaking up all lumps.
- Reduce the heat to 50% and add the vegetables, make sure they are chopped rather small (mexi-beans or kidney beans can be added if you so wish to this stage) and taco seasoning, fry for another 2-4 of minutes (until the taco seasoning become fragrant).

- Let stand for 5 minutes before serving.
Tips for Making Cheesy Taco Casserole:
- Use a variety of cheeses. This will give your casserole a more complex flavor. Cheddar, Monterey Jack, and Pepper Jack are all good choices.
- Don't overcook the beef. The beef should be cooked through, but not dry. If you overcook it, it will become tough and chewy.
- Use a flavorful taco seasoning. This is what will give your casserole its signature taco flavor. You can use a store-bought taco seasoning mix or make your own.
- Drain the taco meat. This will help to remove any excess grease.
- Layer the ingredients in the casserole dish. This will help to ensure that the casserole cooks evenly.
- Bake the casserole until it is bubbly and the cheese is melted. This will usually take about 20-30 minutes.
- Serve the casserole with your favorite toppings. Some popular choices include sour cream, salsa, guacamole, and shredded lettuce.
Conclusion:
Cheesy taco casserole is a delicious and easy-to-make meal that is perfect for busy weeknights. It is also a great way to use up leftover taco meat. With its creamy cheese, flavorful taco meat, and crispy tortilla chips, this casserole is sure to be a hit with your family and friends.
