SWEETCORN PIE

Sweetcorn Pie image

A very tasty side dish, that kids of all ages adore. My nephew, who is 33 years old still asks me to make this dish whenever he sees me, after he tasted it for the first time when he was 11 years old! I think I found this recipe in a South African magazine, but I cannot remember as I have been making this for the past 30 years! ***I have updated the recipe - most of the cheese goes into the pie and a little is sprinkled over the top. I have also added microwave instructions for making white sauce

1/4 cup panko breadcrumbs
2 tablespoons sliced scallions
1/2 cup panko breadcrumbs
2 tablespoons melted butter
1/4 cup shredded cheddar cheese
1/4 cup shredded monterey jack cheese
1/4 teaspoon salt
1 pinch ground black pepper
1 (8 1/2 ounce) package corn muffin mix, Jiffy brand
2 large eggs

2 tablespoons chopped green onions
1 (14 ounce) can cream-style corn
1/2 cup frozen corn kernels, thawed
2 tablespoons chopped scallions
1 cup grated monterey jack cheese, divided
1 cup grated sharp cheddar cheese, divided
1 jalapeno, sliced

Steps:

  • Preheat oven to 400 degrees F. Grease a 9-inch pie dish with cooking spray or butter; set aside.

Pour half of the batter into the pie plate, then top with 1/2 cup shredded cheddar cheese and 1/2 cup shredded monterey jack cheese. Pour remaining batter over and top with sliced jalapenos and another layer of 1/2 cup shredded cheddar cheese and 1/2 cup shredded monterey jack cheese.
  • Bake for 5 minutes, then top the pie with the taco beef, then the cheddar sweet corn, then the panko cheese topping. Bake until the pie is set and the top is golden and crisp, about 35-40 minutes.

Tips:

  • To achieve the creamiest texture, use fresh corn kernels instead of frozen or canned corn.
  • For a sweeter pie, use extra sugar or add a teaspoon of vanilla extract.
  • If you don't have a 9-inch pie plate, you can use an 8-inch pie plate and reduce the cooking time by 10 minutes.
  • To prevent the crust from becoming soggy, pre-bake it for 10 minutes before filling it.
  • Let the pie cool completely before slicing it. This will help the filling to set and prevent it from running out.

Conclusion:

Cheesy sweet corn pie is a delicious and easy-to-make dish that is perfect for any occasion. With its creamy texture, sweet corn flavor, and cheesy topping, this pie is sure to be a hit with everyone at your table. So next time you're looking for a quick and easy meal, give this cheesy sweet corn pie a try!
