EASY CHEESY SQUASH CASSEROLE BAKE

Easy Cheesy Squash Casserole Bake image

This is one of those rare squash dishes that isn't mushy. The squash still has some toothsomeness to it. I had a bumper crop of squash and had to find ways to use it up that didn't involve squishy squash since the husband cannot stand overly soft textured food.

Time 40m

Number Of Ingredients 9

4 small yellow squash, sliced into discs
1/2 small onion, chopped
1 sleeve vegetable flavored ritz crackers
2 c cheddar cheese, shredded
3 eggs, beaten
3/4 c milk
1/4 c butter, melted
2 tsp black pepper
1 tsp salt

Steps:

  • 1. Preheat oven to 400
  • 2. Combine all ingredients well in a large bowl. Spoon evenly into a greased 9x13 casserole dish.
  • 3. Bake for 30 minutes or until top is browned.

Tips:

  • Choose the right squash: For this recipe, butternut squash or acorn squash works best. They have a sweet and nutty flavor that pairs well with the other ingredients.
  • Cook the squash until it is tender: You can do this by roasting it in the oven, steaming it, or boiling it. Once the squash is cooked, it should be easy to mash with a fork.
  • Use a variety of cheeses: This will give your casserole a more complex flavor. Cheddar, Parmesan, and mozzarella are all good choices.
  • Don't overmix the casserole: Overmixing will make the casserole tough. Just stir the ingredients until they are combined.
  • Bake the casserole until it is golden brown and bubbly: This will take about 30 minutes.

Conclusion:

This cheesy squash casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover squash. Serve it with a side of salad or roasted vegetables for a complete meal.
