1/2 cup pine nuts
2 tablespoons (1/4 stick) unsalted butter
1 tablespoon olive oil
2 yellow onions, diced
2 garlic cloves, minced
Three 20-ounce bags frozen chopped spinach, thawed and squeezed of excess water
4 extra-large eggs, lightly beaten
2 cups crumbled feta cheese
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 tablespoon freshly ground black pepper
2 teaspoons kosher salt
Pinch nutmeg
8 sheets frozen phyllo dough, thawed
3 tablespoon unsalted butter, melted
2 teaspoons za'atar (if you can't find za'atar, use sesame seeds)

Steps:

  • For the spinach and cheese mixture: Preheat the oven to 375 degrees F. Grease a 13-by-9-inch baking dish with cooking spray or butter.
  • In a large dry skillet over medium heat, lightly toast the pine nuts. Remove and reserve. In the same skillet, melt the butter with the olive oil. Add the onions and saute until translucent, about 10 minutes. Add the garlic and saute 2 to 3 minutes. Stir in the spinach. Cook until tender and any excess water evaporates, about 5 minutes. I found this recipe on the back of a Bisquick box and made it as it was stated on the box and everyone liked it. Later I changed it a bit so as to make it into a one dish meal and everyone liked it even more. So I thought I'd share it with you.

1 lb lean ground beef
1 large onion, chopped
2 clove garlic, minced
1/4 tsp nutmeg
1/2 pkg frozen chopped spinach
salt and pepper
1 1/2 c cheddar cheese, shredded
CRUST
1 1/2 c milk
3/4 c biscuit mix
3 eggs

Steps:

  • 1. Heat the oven to 350°F and spray a 10 inch ovenproof pan with cooking spray. In a large skillet, over medium heat, add the ground beef, onion, garlic and nutmeg. Stir breaking up lumps till beef is well browned. Add the salt and pepper. (add less salt than you are used to because the cheese and biscuit mix both add salt to the final dish)
  • 2. Add the spinach and stir till heated through. Drain. Pour into the prepared pan. Sprinkle the cheese all over the top.
  • 3. In a separate bowl mix the crust ingredients and pour over filling
  • 4. Bake at 350°F for 15 minutes then increase the heat to 375°F and continue cooking till top is golden brown.

1 (10 ounce) package frozen chopped spinach, thawed and drained
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ teaspoon ground nutmeg
15 ounces ricotta cheese
8 ounces mozzarella cheese
1 cup grated Parmesan cheese
2 cups diced Cheddar cheese

Steps:

1/4 cup flour
1 tablespoon horseradish

1 cup shredded American cheese (4 ounces)

200g pack feta cheese
2 x 250g tubs ricotta
3 x 100g bags baby spinach , chopped
1 bunch spring onions , finely sliced
50g parmesan , grated
1 egg
good grating nutmeg
100g breadcrumbs
2 tbsp olive oil
6 sheets filo pastry

Steps:

  • Heat oven to 180C/ 160C fan/gas 4. Mash feta in a large mixing bowl, add the ricotta and mash again to thoroughly mix. Stir in the spinach, spring onions, Parmesan, egg, nutmeg and plenty of seasoning with half the breadcrumbs.
  • Brush a 20 x 30cm tin with a little oil. Layer in half the filo sheets, brushing each with oil before adding the next. Scatter remaining breadcrumbs evenly over the base. Spoon in the ricotta filling and gently spread, so as not to dislodge the breadcrumbs. Cover with remaining filo, brushing with oil as you go, then score into portions. Bake for 35-40 mins until golden and crisp. When cool, freeze in individual squares. Defrost overnight in the fridge and eat cold, or warm in a microwave.

320g sheet ready-rolled shortcrust
2 tbsp plain flour , plus extra for dusting
50g grated vegetarian Italian-style hard cheese , plus 2 tbsp
½-1 tsp cayenne pepper
500g frozen spinach , defrosted
50g butter
2 shallots , finely chopped
1 large garlic clove , crushed
2 thyme sprigs, leaves picked, plus extra to serve
125g mascarpone
grating of nutmeg
150g vegetarian mature cheddar , grated
2 medium eggs
1 tbsp breadcrumbs

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Unravel the pastry on a lightly floured work surface, and sprinkle the 2 tbsp of hard cheese over one half of the pastry along with ½ tsp cayenne and a crack of black pepper. Fold the other half of the pastry over to close it like a book, and roll out, squashing the cheese in the middle, until it fits into a 22cm tart tin with an overhang. Prick the base with a fork, cover with a sheet of parchment and fill with baking beans. Cook for 15 mins, then remove the parchment and beans. Bake for 10-15 mins until lightly golden, then leave to cool in the tin.
  • Line a baking sheet with baking parchment. Spoon small piles of the remaining hard cheese (about 16) in a thin layer onto the sheet, then bake for 5-7 mins until bubbling and melted. As soon as they look lacy, remove from the oven or they will burn quite quickly. Transfer to a wire rack to cool and crisp up. Will keep in an airtight container for two days.
  • Put the spinach in a sieve over a clean bowl, and squeeze well with the back of a spoon. Keep the liquid.
  • Heat the butter in a heavy-based pan and fry the shallots with a pinch of salt for 10 mins. Stir in the garlic, thyme and 2 tbsp flour, then pour in 250ml of the spinach water, boiling for 1-2 mins. Stir in the mascarpone, nutmeg and a pinch of cayenne, and cook for 5 mins.
  • Fold through the cheddar and spinach, tip into a bowl and leave to cool for 5-10 mins. Stir in the eggs. Sprinkle the breadcrumbs over the tart case, then pour in the filling. Bake for 35-40 mins until golden. Leave to cool a little before topping with thyme and the cheesy crisps.
