CREAMY CHEESY SPINACH DIP

Creamy Cheesy Spinach Dip image

This recipe doesn't contain mayo or sour cream like most, so it's very cheesy and very delicious. I'm asked for the recipe every time I make it. For those who don't want a strong cheese like Cheddar, you can replace it with anything you like or even leave it out altogether. I like adding the Cheddar because it adds color and a little more flavor.

Provided by Fauve

Categories     Spinach

Time 1h

Yield 6 serving(s)

Number Of Ingredients 7

2 (10 ounce) packages frozen spinach, thawed and well drained
8 ounces cream cheese, at room temperature
2 (8 ounce) packages monterey jack pepper cheese, shredded (reserve about 1/3 cup shredded cheese for topping)
2 garlic cloves, minced
1 medium onion, chopped
10 ounces Rotel Tomatoes, well drained
1 cup parmesan cheese

Steps:

  • Preheat oven to 375*.
  • Thaw spinach, drain well and place in a large mixing bowl.
  • Add softened cream cheese, mix together with electric mixer.
  • Add shredded pepper jack (all but 1/3 cup), tomatoes, garlic, onion and Parmesan cheese. Blend well.
  • Place mixture in 9 x 11" baking dish. Top with remaining 1/3 cup pepper jack cheese.
  • Bake, covered, at 375* for 30 minutes.
  • Remove lid and continue baking for 15 more minutes, or till bubbly and browned slightly on all sides.
  • Serve with chips or dippers of your choice.

Tips:

  • Use fresh spinach: Fresh spinach gives the dip a vibrant green color and a slightly bitter flavor that pairs well with the cheese.
  • Squeeze the spinach dry: Before adding the spinach to the dip, squeeze it dry to remove excess moisture. This will help prevent the dip from becoming watery.
  • Use a variety of cheeses: A combination of cheeses, such as cream cheese, cheddar cheese, and Parmesan cheese, gives the dip a rich and complex flavor.
  • Don't overcook the spinach: Overcooked spinach will become limp and mushy. Cook it just until it is wilted, about 1-2 minutes.
  • Serve the dip warm: Cheesy spinach dip is best served warm, so it can be enjoyed as a gooey and melted appetizer.

Conclusion:

Cheesy spinach dip is a classic party appetizer that is easy to make and always a crowd-pleaser. With its creamy, cheesy texture and flavorful spinach, this dip is sure to be a hit at your next gathering. Whether you serve it with crackers, chips, or vegetables, cheesy spinach dip is a delicious and satisfying snack that everyone will love.
