Provided by Parsley

Categories     Spinach

Time 5h10m

Yield 8 serving(s)

Number Of Ingredients 11

2 (16 ounce) bags frozen leaf spinach, thawed, NOT chopped spinach
1 cup chopped onion
8 ounces low-fat cream cheese, cubed, can use regular
1 1/2 cups low fat cottage cheese
2 cups shredded cheddar cheese
2 eggs, beaten
1/4 cup butter, cut up
1/4 cup flour
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4-1/2 teaspoon salt, to taste

Steps:

  • Spray your crock pot with nonstick cooking spray.
  • Add all ingredients to crock pot; mix well.
  • Cover and cook on low for about 4-6 hours, or 1 hour on high, then about 2 hours on low. Stir halfway through cooking time.
  • Stir again before serving.

Tips:

  • Prep the Ingredients: Before you start cooking, make sure all your ingredients are prepped and measured. This will help you stay organized and make the cooking process smoother.
  • Use Fresh Spinach: For the best flavor and texture, use fresh spinach instead of frozen. If you only have frozen spinach, thaw it and squeeze out any excess moisture before using.
  • Don't Overcook the Eggs: The eggs in this dish should be cooked until they are just set, but not overcooked. Overcooked eggs will become rubbery and tough.
  • Use Good Quality Cheese: The type of cheese you use will greatly impact the flavor of the dish. Use a good quality cheddar cheese that melts well.
  • Season to Taste: Don't forget to season the dish with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika, to your liking.

Conclusion:

This cheesy spinach artichoke egg bake is an easy and delicious breakfast, brunch, or lunch dish. It's perfect for busy mornings or lazy weekends. The combination of spinach, artichoke, cheese, and eggs is simply irresistible. So next time you're looking for a satisfying and flavorful meal, give this recipe a try!
