Tips:

  • Prep your seafood: Before you start cooking, make sure your seafood is properly cleaned and deveined. If using shrimp, remove the shells and tails. If using fish, remove the skin and bones.
  • Use fresh ingredients: The fresher your ingredients, the better your enchiladas will taste. This is especially true for the seafood, which should be as fresh as possible.
  • Don't overcook the seafood: Seafood cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and rubbery.
  • Use a good quality cheese: The cheese is one of the key ingredients in this recipe, so it's important to use a good quality cheese that melts well. A Mexican blend or cheddar cheese are both good options.
  • Serve immediately: These enchiladas are best served immediately after they are made. The tortillas will become soggy if they sit for too long.
