1 cup chopped onions

6 cups chicken stock

Steps:

2 large eggs
1/2 cup frozen corn, thawed
1/2 cup fresh bread crumbs
1/4 cup grated Parmesan
Kosher salt and freshly ground black pepper
1/4 cup canola oil

Steps:

  • In a large bowl add the leftover risotto, eggs, corn, bread crumbs, and Parmesan and season with salt and pepper, to taste. Mix to combine well. Form into 12 balls about the size of a walnut, then flatten into patties and arrange on a baking sheet.
  • Heat the oil in a large nonstick skillet over medium heat. Add the patties and cook until they are golden brown, about 3 to 4 minutes per side. 2 Tbsp olive oil
2 medium onions, halved, sliced
1 1/2 Tbsp brown sugar, firmly packed
3 Tbsp balsamic vinegar
1 c arborio rice
2 1/2 c chicken stock , boiling
2 Tbsp butter
1 c grated parmesan
1/2 c mozzarella, cut into small cubes

Steps:

  • 1. Heat 1/2 the oil in a medium frying pan on low. Cook onion for 15 minutes, covered, or until very soft. Add the sugar and vinegar and stir until combined. Cook for 5 minutes, until onion is caramelized.
  • 2. Meanwhile, heat remaining oil in a large saucepan on high. Add the rice and cook for 1 minute or until rice is coated. Add all but 1/4 cup of hot stock. Stir and simmer on low, covered, for 12-15 minutes, or until rice is tender. Remove from heat, add remaining stock with butter, 3/4 cup of the Parmesan and the caramelized onion; stir to combine. Transfer to a container and chill overnight.
  • 3. Preheat oven to 200^ . Grease a 24 hole mini-muffin pan. Place a circle of waxed papen in each mini well;spray paper. Roll 1 Tablespoon or the risotto into a ball. Using index finger, press a hole in center of ball, fill with a piece of mozzarella and roll ball to enclose the cheese. Press into well sprayed mini-pan. Repeat with remaining risotto and cheese. Sprinkle remaining Parmesan cheese over the rice balls.
  • 4. Bake for 20 minutes , or until firm and golden. Cool in pan for 8 minutes, Run a small spatula of knife around edge of cakes to loosen before removing from pan. remove waxed paper. Serve warm or cold.

4 1/2 cups chicken stock
1/4 cup unsalted butter
1 medium onion, chopped
1 1/2 cups arborio rice
1 cup white wine
1/2 cup parmesan cheese
1/2 cup scallion, chopped
2 tablespoons olive oil
1/2 cup all-purpose flour

Steps:

  • In a large saucepan, bring the chicken stock to a simmer. In a medium saucepan, melt butter over medium heat. Add the onion and saute for 5 minutes or until soft. Add the rice and stir until coated.
  • Increase the heat to medium-high. Add the wine. Cook, stirring constantly for 4 minutes or until wine is absorbed. Add about 1 cup chicken stock (enough to just cover the rice) and cook, stirring constantly, until the stock is absorbed. Continue adding stock, 1 cup at a time, stirring until it is absorbed before adding more. The rice is done when it is just cooked through and lightly bound with creamy liquid, about 15 minutes.
  • Remove risotto from heat and stir in Parmesan cheese and scallion. Spread risotto evenly in a greased sheet pan and refrigerate until very firm, at least 4 hours or overnight.
  • In a large saute pan, heat the olive oil over medium heat. Form risotto cakes by shaping handfuls of risotto into 3 x 1/2 inch disks. Dredge the cakes in flour to coat. Saute cakes in hot oil until golden.

1/2 cup chopped Baby Spinach
1 tomatoes (I've often used chargrilled red pepper) or 1 red pepper, diced (I've often used chargrilled red pepper)
salt, to taste
fresh ground black pepper, to taste
1/2 teaspoon dried oregano
1/2 cup parmesan cheese, grated

Steps:

  • Combine risotto, spinach, tomato (or red pepper) and seasonings in a bowl and mix well until combined.
  • Lightly grease a mini-muffin pan or spray it with oil, spoon the mixture into the recesses until the tops are rounded, and sprinkle the risotto cakes with parmesan.
  • Bake in a moderate oven (180ºC) for 15 to 20 minutes or until the risotto cakes are firm and golden. If serving warm, allow the risotto cakes to rest in the pan for 5 minutes before removing them from the pan.

25g butter
1 tbsp olive oil
1 onion , finely chopped
2 garlic cloves , finely grated
200g risotto rice
200ml white wine
800ml warm chicken stock
50g fresh parmesan (or vegetarian alternative)
½ ball of mozzarella , diced
pinch of cayenne pepper , to taste
2 tbsp mascarpone

Steps:

  • Melt the butter and olive oil together in a large, shallow saucepan, add the onion and garlic, and cook for 5-10 mins until soft. Add the risotto rice and cook for 2-3 mins, getting a good covering in the fats and giving the rice a slightly toasted flavour.
  • Add the white wine and cook until it has reduced away. Add the warm chicken stock, a ladleful at a time, and stir into the rice - when it has been absorbed, add more. You may not need to add all the stock, but keep adding until the rice is cooked al dente. It will take around 15 mins to get the risotto to the right consistency.
  • Take the rice pan off the heat and stir in the cheeses, season and leave to rest for 3-4 mins. Serve with the roasted poussins, morel sauce and some wilted Baby Gem lettuce leaves.

A creamy cheesy risotto. The nuts add a nice crunch. It's easy to make, and pairs well with an oven baked dish, as it does need some attention while cooking. Contrary to what some say, risotto does not need CONSTANT stirring, but it does need stirred frequently. You don't want to let it go for more than a minute or so without a stir. Using low sodium chicken broth is important, as the cheese can be salty. This was a contest entry for RSC #11.

1 tablespoon butter
1/2 tablespoon olive oil
1/4 cup shallot, chopped small
2/3 cup arborio rice (or other small or medium grain rice)
1/2 cup dry white wine
2 1/2 cups low sodium chicken broth, plus more
chicken broth, if needed (I use light and fat free)
1/4 cup grated smoked gouda cheese
1/4 cup grated asiago cheese
1/4 cup pecans, chopped or 1/4 cup toasted pine nuts
1 dash ground cayenne pepper

Steps:

  • Warm chicken broth either on stove or in microwave.
  • In a 2 quart saucepan or large skillet (non stick works well) heat butter and olive oil over medium heat. Add shallots and saute for 1-2 minutes until softened.
  • Raise heat to medium high, add rice and salt, stirring constantly for 2 minutes, until rice just begins to turn slightly golden in color.
  • Add wine and stir until almost completely evaporated.
  • Begin adding chicken broth, about 1/2 cup at a time.
  • After each 1/2 cup addition of broth, stir frequently, until broth is almost evaporated and add the next 1/2 cup.
  • Do the same for each addition of broth, stirring frequently.
  • Begin tasting the rice for doneness during the last two additions of broth for tenderness--it should be al dente-tender with a slight bite to it.
  • If rice is not done after the last addition, continue cooking as above adding additional 1/2 cups of broth until done. The entire process should take about 20 minutes.
  • Remove from heat and stir in cheese, cayenne and pecans or pine nuts. You can also add the additional teaspoon of butter if you want it extra rich at this point.
  • Adjust the salt if needed, remembering that there is a lot of salt in cheese and possibly in the type of broth you use.
  • Serve hot.

I was going through my America's Test Kitch Family cookbook and came across this. I realized I had leftover rissoto in my fridge and thought I would try it. It turned out great and I would have never thought to use my leftovers this way! Instead of using oil I prefer to use a butter or olive oil flavored pan spray, which I think is healthier than oil. If you use that, spray the pan with several sprays to ensure enough coating for great browning. Also, I had quite a bit rice leftover, about 2/ 1/4 Cups of rice, so I had to adjust the ingredients some. This recipe should make 2. When I made it I came out with 6 medium sized rice cakes, so you may want to double the recipe if needed. You could also bake these rather than frying. Enjoy!!
