CHEESY RANCH POTATO BAKE
This is a delicious side dish with cheese, potatoes, and Ranch! What's not to love?! I am always begged to bring this wherever I go. It is a great complement to a barbeque or any potluck meal. I have experimented with using more chili powder and using seasoning salt instead of regular salt.

- Wash and pierce potatoes in several places with a fork. Microwave on high 10 minutes until tender. Set aside to cool slightly.
- Preheat oven to 350 degrees. Grease an 11 x 7 inch baking pan.
- Combine cream cheese and sour cream in a large bowl; beat until smooth.
- Add yellow onion, half of the cheese, half of the bacon bits and salt. Mix well.

- Then add to the cream cheese mixture. Beat with a mixer. Stir in milk, dry ranch dressing mix, and mix well.
- Spread potato mixture in prepared pan. Bake uncovered 30 minutes. Remove from oven, sprinkle with remaining cheese, bacon pieces, and green onions.
- Bake 5 minutes longer, or until cheese melts.
Tips:
- Selecting the Right Potatoes: For the best texture and flavor, choose a combination of waxy and starchy potatoes. Waxy potatoes, such as Yukon Gold or Red Potatoes, hold their shape well and provide a creamy texture, while starchy potatoes, such as Russet Potatoes, break down more easily and create a fluffy texture.
- Use Fresh Ingredients: Fresh herbs, spices, and vegetables can significantly enhance the flavor of your Cheesy Ranch Crack Potatoes. Choose high-quality ingredients to ensure the best results.
- Don't Overcook the Potatoes: Cooking the potatoes for too long can make them mushy. Aim for a slight crunch in the center to retain their texture and prevent them from becoming too soft.
- Season Generously: Don't be afraid to season your potatoes liberally with salt, pepper, garlic powder, and onion powder. These basic seasonings will bring out the flavors of the other ingredients.
- Don't Skimp on the Cheese: Use a combination of shredded cheddar cheese and Parmesan cheese to create a rich and gooey cheese sauce. You can also add other types of cheese, such as mozzarella or Gouda, for a more complex flavor.
- Use a Good Quality Ranch Dressing: The ranch dressing is a key component of this dish, so choose a brand that you enjoy the taste of. You can also make your own ranch dressing using fresh herbs and buttermilk.
Conclusion:
Cheesy Ranch Crack Potatoes are an indulgent and flavorful side dish that is perfect for any occasion. With a crispy exterior, a tender and creamy interior, and a delicious cheesy ranch sauce, these potatoes are sure to be a hit among your family and friends. Whether you are serving them at a potluck, a barbecue, or a holiday dinner, these potatoes will be a crowd-pleaser. So, gather your ingredients, preheat your oven, and get ready to experience the cheesy, ranch-y goodness of this irresistible dish!
