30 ounce bag, shredded hash brown (thawed (can also use the refrigerated shredded potatoes, Simply Potatoes is one brand))
½ cup green onions (chopped)
2 cups shredded cheddar cheese
8 ounces sour cream
2 (10.5 oz) cans cream of chicken soup
1 teaspoon Lawry's seasoning salt
½ teaspoon onion powder
¾ teaspoon garlic powder
¼ teaspoon black pepper
1½ cups plain potato chips (crushed)

Steps:

  • Preheat the oven to 350.
  • In a large bowl mix together all the ingredients (EXCEPT FOR THE POTATO CHIPS), until the ingredients are well combined.
  • Pour into a 9x13 baking pan.
  • Top with the crushed potato chips and cover with foil.

¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

6 medium russet potatoes - boiled in salted water -cooled, peeled and grated
2 c sour cream
8 green onions, sliced
2 c cheddar cheese, shredded - i use sharp - reserving 1/2 cup for topping
1 1/2 tsp salt or to taste
1 tsp pepper
1/2 tsp dried rosemary - optional
3/4 - 1 c frenches, french fried onions

Steps:

  • 1. Poke your potatoes with a fork and boil in salted water until centers are tender. Drain and cool. Once cool, peel and shred...I either use my grater or food processor. In a large bowl, combine potatoes, onions, seasonings,sour cream and 1 1/2 cups cheese.
  • 2. Preheat oven to 375 degree F. Grease a large casserole dish, I use my 3 quart corning casserole. Could also use a 9 x 13 baking dish. Spread potato mixture into prepared dish. Bake for approx, 30 minutes - sprinkle with remaining 1/2 cup cheese and then french fried onions - place back in oven and continue baking until top is browning and bubbly. Serve hot...enjoy!
