1 package (16 ounces) frozen bread dough dinner rolls (12 count), thawed but still cold
1/2 cup panko bread crumbs
2 tablespoons chopped onion
1 tablespoon canola oil
1/4 teaspoon salt
1/8 teaspoon pepper
12 bun-length beef hot dogs
1 package (7-1/4 ounces) macaroni and cheese dinner mix

Steps:

  • Let dough stand at room temperature until soft enough to shape, 15-20 minutes. Cut each roll in half; shape each half into a 3-in.-long mini hot dog bun. Place 2 in. apart on greased baking sheets., Cover with greased plastic wrap; let rise in a warm place until almost doubled, about 45 minutes. Preheat oven to 350°., Bake buns until golden brown, 12-15 minutes. Remove from pans to wire racks to cool completely., In a 15x10x1-in. baking pan, toss bread crumbs with onion, oil, salt and pepper. Bake at 350° until golden brown, stirring once, 5-7 minutes. , Cook hot dogs and macaroni and cheese according to package directions. To serve, cut hot dogs crosswise in half.   • Make mac and cheese: In a large skillet over medium heat, melt butter. Add flour and whisk until combined. Let cook until golden, 1 minute, then pour in milk and season with salt and pepper. 1 1/3 cups pre-grated mild Cheddar
Pancake Batter, recipe follows
2 cups cooked elbow macaroni
4 hot dogs, sliced into 1/4-inch circles, optional
Nonstick cooking spray, for the pancakes
3 scallions, thinly sliced
Habanero Maple Syrup, recipe follows
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
2 eggs
2 1/2 cups buttermilk
1 habanero pepper
4 cups Vermont maple syrup

Steps:

  • Blend together the hand-grated and pre-grated Cheddars in a bowl. Set aside.
  • Preheat griddle to medium heat. Ladle 4 pancakes on the griddle at a time; do not overcrowd. Add 1/4 cup macaroni to each pancake, followed by 1/2 hot dog per pancake, if using, followed by 1/3 cup Cheddar per pancake. When you notice the edges bubbling vigorously, spray the entire pancake and griddle with nonstick spray, then flip the pancakes. Press down on the pancakes with a great deal of force (think panini style).
  • Cook until the cheese is lightly browned, about 3 minutes. Remove from the griddle, sprinkle with scallions and serve with warm Habanero Syrup. Repeat to make 4 more.
  • Mix flour, baking soda, salt, eggs and buttermilk in a bowl until just combined; your batter should look lightly lumpy but combined. Set aside for at least 2 hours.
  • Slice habanero in half and place in a saucepan with maple syrup. Bring up to a full boil and turn off right away to avoid boil-over. Let stand for 3 hours. Strain out pepper.

8 oz elbow macaroni
1 lb pkg hot dogs sliced
2 lb velveeta cheese
2 shallots diced
5 Tbsp butter
1/4 c flour
2 c milk
salt and pepper to taste

Steps:

  • 1. Cook the macaroni and drain well. Place in a greased 2 qt. casserole dish. Top with sliced hot dogs.
  • 2. Melt the butter on top of stove in a saucepan. Saute the shallots 2 minutes. Add the flour and make a roux. Slowly add the milk and cook until thickened a bit. Slice the Velveeta into pieces and add to milk. Stir and cook until smooth and melted.

1/4 cup milk
4 tablespoons margarine
4 hot dogs
