Time 40m

Number Of Ingredients 7

1 pkg lemon cake mix
1 large egg
1/3 c vegetable oil
2 oz (8) cream cheese
2/3 c sugar
2 large eggs
2 tsp lemon juice

Steps:

  • 1. Preheat oven to 350º. Mix dry cake mix with 1 egg and 1/3 cup of oil until crumbly. Reserve 1 cup of mixture. Pat into 9x13 baking dish; set aside.
  • 2. In a medium mixing bowl beat cream cheese until smooth. Add sugar until well blended.Add eggs, followed by lemon juice. Beat until creamy. Pour over prepared crust. Evenly sprinkle reserved crumb mixture over top.
  • 3. Bake for 30 minutes. Cool completely before serving. Store leftovers in refrigerator.

Tips:

  • Use fresh lemons: Freshly squeezed lemon juice and zest provide the best flavor for these bars.
  • Don't overmix the batter: Overmixing can make the bars tough. Mix just until the ingredients are combined.
  • Bake the bars until they are just set: The bars should be slightly jiggly in the center when you remove them from the oven. They will continue to set as they cool.
  • Chill the bars before slicing: Chilling the bars makes them easier to slice and prevents them from crumbling.
  • Garnish with powdered sugar: A dusting of powdered sugar adds a touch of sweetness and elegance to the bars.
