CHEESY KALE CHIPS

An addictive alternative made with nutritional yeast. Who would have thought that leafy green chips loaded with nutrients could be so addictive? Nutritional yeast is deactivated yeast; it's not alive and has a slightly cheesy flavor which many vegans like to use as a cheese substitute. It can be found at most health food stores and some big-chain grocery stores.

1 bunch of Kale
1-2 Red Bell Peppers
1-2 cloves garlic
1/4 cup tamari sause or soy sause
1/4 apple cider vinegar
1/2 cup whole raw cashews
sea salt to taste
Lime juice to taste

Tips:

  • Choose fresh kale with vibrant green leaves. Avoid leaves with yellow or brown spots.
  • Wash the kale thoroughly to remove any dirt or debris.
  • Use a large bowl to toss the kale with olive oil, salt, and pepper. Make sure the kale is evenly coated.
  • Spread the kale in a single layer on a baking sheet. Do not overcrowd the baking sheet, or the kale will not cook evenly.
  • Bake the kale at a high temperature for a short period of time. This will help the kale to crisp up without burning.
  • Keep an eye on the kale while it is baking. Once the edges of the leaves begin to brown, remove the kale from the oven.
  • Immediately sprinkle the kale with grated Parmesan cheese. The heat of the kale will help the cheese to melt and adhere to the leaves.
  • Let the kale cool for a few minutes before serving. This will help the cheese to set and the kale to become crispy.
