1 1/2 cups cut-up cooked chicken
1 1/4 cups shredded mozzarella cheese (5 ounces)
1/3 cup grated Parmesan cheese
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/2 teaspoon garlic powder
1 can (8 ounces) tomato sauce
1/2 cup Original Bisquick™ mix
1 cup milk
1/4 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°. Grease bottom and side of pie plate, 9x1 1/4 inches, with shortening. Mix chicken, 1/2 cup of the mozzarella cheese, the Parmesan cheese, oregano, basil, garlic powder and 1/2 cup of the tomato sauce; spoon into pie late.
  • Stir Bisquick, milk, pepper and eggs until blended. Pour over chicken mixture.
  • Bake uncovered 35 minutes. Sprinkle with remaining 3/4 cup mozzarella cheese. Bake 5 to 8 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with remaining tomato sauce, heated if desired.

1 lb 16 ounce pasta of your choice
1 lb bacon, cooked crisp
5 - 6 boneless, skinless chicken breasts, cubed and cooked
1 - 8 oz cream cheese, softened
2 Tbsp olive oil
1 1/2 c onion
4 clove garlic, minced
2 ( 14.5 ounce ) cans diced tomatoes with garlic, basil and oregano
4 c mozzarella cheese, divided
2 c heavy whipping cream
oregano, dried
salt and pepper to season chicken

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with cooking spray, set aside. Cook and drain your pasta. Set aside.
  • 2. In a large skillet fry your bacon crisp, remove to a paper towel to drain.
  • 3. Save about 4 tablespoons of bacon grease, and brown your seasoned chicken in the same skillet till juices no longer run pink.
  • 4. In another large skillet or you can use the same one as chicken, once removed. Brown your onions and garlic with the olive oil. Till tender.
  • 5. Next, add your tomatoes and cream, bring to a slow boil for 3 minutes. Reduce heat and simmer for a few minutes until begins to thicken some. Stir in the cream cheese and half the mozzarella cheese until thoroughly blended. Add the chicken to the sauce.
  • 6. In the dutch oven I boiled my pasta in; add the pan of sauce to the pasta, and stir till evenly coated. Spread the pasta into the baking dish. sprinkle with remaining mozzarella. Then top cheese with oregano. And finally top with bacon.
  • 7. Place the dish into the oven, and bake for approx 40 - 45 minutes or until bubbly. I then placed under a broiler to brown a bit more ( do not have to ). Let the pasta set for 5 minutes before serving. I served the pasta with buttered Vienna bread. Enjoy!

2 cups spaghetti sauce
1 (15 ounce) package chicken breast tenders (not breaded)
6 ounces shredded Italian cheese blend
8 ounces uncooked spaghetti

Steps:

  • Heat oven to 350. Into ungreased 8-inch square baking dish, spoon and spread one cup of the spaghetti sauce. Top with chicken tenders in a single layer. Spoon remaining sauce over chicken and sprinkle with cheese.
  • Bake uncovered 30-35 mins or until everything is bubbly and chicken is no longer pink.
  • Cook spaghetti as directed on the package, drain.
  • Serve chicken and sauce over spaghetti.

1/2 cup Italian seasoned breadcrumbs
1/2 cup freshly grated parmesan cheese (you can use the green stuff if you want but fresh is better!)
2 large eggs
1 teaspoon black pepper, divided
2 chicken breast halves
3 tablespoons olive oil
3 tablespoons butter

Steps:

  • Blend the bread crumbs & the cheese together with 1/2 of the teaspoon of black pepper and set aside.
  • Beat the eggs together and add the other 1/2 teaspoon of black pepper.
  • Split each breast in half width wise so that you will have 4 thin pieces of chicken.
  • Heat the olive oil and the butter in a large skillet until medium hot.
  • Dip each piece of chicken into the egg mixture then into the breading mixture, being sure to put as much breading as possible on each side -- patting helps.
  • Place the chicken in the skillet.
  • Brown well on both sides, cooking time is a approximate depends on size of meat.
  • Drain on Paper Towels & Enjoy.
  • Because the chicken pieces are thin they will cook quickly and be done in a very short time.

1 cup milk

Steps:

  • Heat oven to 400. Grease pie plate, 9X1 1/4 inches. Sprinkle Parmesan cheese in pie plate. Mix chicken, 1/2 cup of the mozzarella cheese, the oregano, basil, garlic powder and tomato paste; spoon over parmesan cheese. Stir baking mix, milk, pepper and eggs until blended. Pour over chicken mixture Bake uncovered for 35 minutes. Sprinkle with remaining 3/4 cup mozzarella cheese. Bake uncovered for 5 to 8 minutes or until center comes clean. Cool 5 minutes

3 chicken thighs, boneless and skinless, cut in one inch pieces
1 lb sweet italian sausage
1/2 onion, diced
1/2 green pepper, diced
5 cremini mushrooms, diced
1 small zucchini, cut into 1-inch pieces
2 medium tomatoes, cut into 1-inch pieces
1/3 c olive oil
1 Tbsp butter
1 Tbsp worcestershire sauce
1/4 c all purpose flour
3 c milk
1 lb spaghetti
1/3 c parmesan cheese, grated
3 c colby cheese, shredded
1-2 tsp seasoning salt
2 tsp italian seasoning
salt and pepper to taste

Steps:

  • 1. Brown Italian sausage in one tablespoon of olive oil. Set aside. Season the chicken breast with one teaspoon of Italian seasoning and half a teaspoon of seasoning salt. In the same skillet add another tablespoon of olive oil and brown the chicken. Set the chicken aside reserving the remaining olive oil in the pan.
  • 2. Boil the spaghetti according to package directions until it is just al dente. Set aside reserving the pasta water.
  • 3. Add one tablespoon of olive oil to the skillet and the zucchini pieces. Saute for 2 minutes. Add 1/3 cup of the pasta water and cover. Simmer for 3 to 4 minutes until zucchini is tender but not mushy. Remove the zucchini from the skillet and set aside. Discard any liquid remaining in the skillet.
  • 4. And the remaining olive oil and butter to the skillet. Add worcestershire sauce. Saute the onions, bell peppers and mushrooms until they are soft. Sprinkle the flour over these vegetables and stir until the flour is combined. Saute for a minute or two to get rid of that raw flour taste.
  • 5. Pour milk into the skillet with vegetables and stir until it starts to thicken. Add the remaining seasoning salt and Italian seasoning. If it becomes too thick use a little pasta water to thin the mixture to a sauce consistency. Add the tomatoes and parmesan cheese and stir to combine.
  • 6. Drain the spaghetti. Add the meats, zucchini and the shredded cheese to the spaghetti and pour the sauce over the mixture. Stir together until all cheese is melted. Add salt and pepper to taste and serve hot with some garlic bread and a salad to make a completely comforting meal.
