Number Of Ingredients 11

1 avocado
2 teaspoons lime juice
1 teaspoon minced garlic
1/8 cup chopped green onion
1/4 cup diced tomato
1/8 cup diced yellow onion
1/8 cup diced green bell pepper
salt and chili powder
1 tablespoon olive oil
48 inches flour tortillas
1 cup shredded cheddar cheese

Steps:

  • Pit avocado and mash in a small mixing bowl with the lime juice. Add garlic, green onion, tomato, yellow onion, bell pepper, salt and chili powder. Mix thoroughly. Cover and refrigerate for 30 minutes.
  • Heat oil over medium heat in a medium skillet. Place tortilla in skillet and top with 1/3 cup cheese. When cheese has melted and tortilla is slightly browned, spoon on some guacamole and top with another tortilla. Flip, and allow the second tortilla to brown.
  • Remove from heat and cut into wedges. Repeat with remaining ingredients.

2 medium flour tortillas
2/3 cup shredded cheese ((Oaxaca, Chihuahua, Mozzarella, or Monterey Jack are best))
salt, (to taste)
sour cream (or Mexican crema)
guacamole
pico de gallo (or your favorite chunky salsa)

Steps:

  • Heat a large nonstick skillet or comal over low-medium heat. Heat the tortillas slightly, flipping them over every 10 seconds, until they're easily foldable and pliable.
  • Evenly divide the cheese and sprinkle it onto one half of each tortilla. Generously season with salt.
  • Fold the tortillas over the cheese to create a half-moon shape.
  • Cook the quesadillas for 1-2 minutes, or until one side of the quesadilla is golden-brown. You may have to press down lightly on the tops of the quesadillas with a spatula to prevent the tortillas from opening up.
  • Flip over and cook for another 1-2 minutes, until golden-brown and the cheese has fully melted.
  • Serve immediately as is, or cut them in half and serve with sour cream, pico and your favorite salsa.

1-1/2 cups shredded Mexican cheese blend
1/2 cup salsa

Steps:

  • Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over. , Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

Four 12-inch flour tortillas
1/2 cup grated Cheddar
1/4 cup grated mozzarella
1/2 cup grated queso blanco
Olive oil
Guacamole, recipe follows

Steps:

  • Lay out 2 of the flour tortillas on a flat surface. Top with the cheeses, spreading evenly over the tortillas. Top with remaining tortillas and press to seal.
  • Heat a large saute pan over high heat. Add enough oil to coat the bottom of the pan and lower the heat to medium. Cook until golden brown on both sides, about 3 minutes per side. Repeat with the other quesadilla.
  • Let cool for 5 minutes. Slice into 8 or 10 pieces. Serve with the Guacamole.
