5 scallions (4 cut into 1-inch pieces, 1 thinly sliced)
1 tablespoon whole-grain mustard
4 large eggs
1/4 cup fresh parsley
2 tablespoons roughly chopped fresh dill

Steps:

  • Combine 3 1/2 cups water, the milk, 1/2 teaspoon salt and a few grinds of pepper in a saucepan and bring to a boil. Slowly add the grits, whisking constantly. 3 ounces sharp cheddar, grated (about 3/4 cup)
