CHEESY GLUTEN-FREE LOAF - LARGE (ABM)

Cheesy Gluten-Free Loaf - Large (Abm) image

This is based on the recipe from my Cuisinart Recipe Booklet that came with my convection bread maker. This large-sized makes a 2 pound loaf. The medium-sized (1 1/2 pound loaf) version is posted as recipe #277392. I'm not sure how this will turn out in a non-convection bread maker. Posting for a friend who's doctor has him trying a gluten-free diet. "Garfava" flour is garbanzo and fava flour -- I use Bob's Red Mill brand. I'll try it in my non-convection Zojirushi bread machine and post the results. Cook time is all bread machine time.

  • Make sure your bread maker has a gluten-free setting. If it doesn't, you can still make this bread by using the dough setting and then baking it in a preheated oven.
  • Use a gluten-free flour blend that contains xanthan gum. This will help to give the bread a chewy texture.
  • If you don't have a bread maker, you can also make this bread by hand. Just mix the ingredients together in a large bowl and then knead the dough for about 10 minutes. Place the dough in a greased loaf pan and let it rise for about 1 hour, or until it has doubled in size. Bake the bread in a preheated oven at 350 degrees Fahrenheit for about 30 minutes, or until it is golden brown.
  • This bread is best served warm. You can slice it and toast it, or you can use it to make sandwiches or croutons.

It is also a great option for people who are looking for a healthier alternative to traditional white bread.
