Steps:
- Note: This recipe uses a lot of sauce, but the pasta absorbs a lot of it when it bakes. We don't want dry pasta.
- Preheat oven to 375 degrees.
- Combine the Ricotta, Parmesan, egg, and 1 cup (not all) mozzarella cheese and set aside.
- Begin boiling the pasta water while you cook the meat for the sauce. Cook the pasta for 2 minutes less than al dente, then drain. (Be sure to time it exactly so that you don't end up with mushy pasta.)
- Cook and crumble the ground beef and diced onions over medium-high heat. Drain grease. Add garlic, red pepper flakes, salt/pepper, onion powder, and Italian seasoning. Cook for 1 minute.
- Add the marinara sauce. Stir to combine and heat through. Remove from heat.
- Combine the drained pasta with about ¾ of the sauce mixture and transfer it to a lightly greased 9 x 13 inch baking dish. Add dollops of the ricotta mixture over the top, then the rest of the meat sauce.
- Cover and bake for 20 minutes. Remove and top with remaining 1 ½ cups mozzarella cheese. Increase oven temp to 400 and bake uncovered for 10-15 more minutes, until the top begins to bubble and brown.
- Garnish with parsley and serve with garlic bread with cheese.

CHEESY BAKED PASTA WITH SAUSAGE AND RICOTTA
Like a cross between baked ziti and sausage lasagna, this mozzarella-topped pasta is rich with ricotta and crushed tomatoes - and cooks entirely in one pan, including the pasta. The Italian sausage adds meaty depth to the sauce, but vegetarians can leave it out or use their favorite plant-based sausage instead.

Steps:
- Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
- Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
- Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
- Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.

Steps:
- Preheat the oven to broil on high. Line a 9-by-13-inch baking dish with foil and coat lightly with oil.
- Put the breadcrumbs in a large mixing bowl and pour the milk over the top. Stir to combine and let stand 5 minutes. Add the beef, pork, Parmesan, oregano, garlic, 3/4 teaspoon salt and 1/4 teaspoon black pepper and mix to combine with your hands. Add the egg and mix well to incorporate. Roll the mixture into 1 inch balls, arranging them in the prepared baking dish.
- Broil the meatballs about 3 inches from the element until browned on top, about 4 minutes. Turn the meatballs over and continue to broil until golden brown and cooked through, about 4 minutes more.
- Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil.
- Heat the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of tomatoes and 1 cup of water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Season with salt and pepper.
- Meanwhile, cook the fusilli in the salted boiling water until very al dente, about 2 minutes less than the package directions. Drain the pasta and transfer to a large bowl.
- Add the tomato sauce, meatballs and half of the mozzarella and Parmesan to the bowl and stir well to combine. Transfer the pasta to a 3- to 4-quart baking dish. Dollop the ricotta by spoonfuls onto the pasta. Top with the remaining mozzarella and Parmesan. Bake, uncovered, until browned, about 15 minutes. Let the pasta stand about 10 minutes before serving.
Tips:
- Use high-quality ingredients: The better the ingredients, the better the pasta will be. Use fresh, flavorful vegetables, high-quality meats, and a good quality cheese.
- Don't overcook the pasta: Al dente pasta is the ideal consistency for baked pasta dishes. It should be cooked through but still have a slight bite to it.
- Use a variety of meats: This recipe uses four different types of meat, but you can use any combination of meats that you like. Some popular options include ground beef, Italian sausage, pepperoni, and bacon.
- Use a flavorful sauce: The sauce is what really brings this dish together. Use a sauce that is flavorful and has a good consistency. A thick, hearty sauce will work best.
- Add plenty of cheese: Cheese is a key ingredient in baked pasta dishes. Use a good quality cheese that melts well. Mozzarella, cheddar, and Parmesan are all popular choices.
- Bake the pasta until it is golden brown: The pasta should be baked until it is golden brown and bubbly. This will give it a nice crispy crust.

With its combination of four different meats, flavorful sauce, and plenty of cheese, this dish is sure to be a hit with everyone at the table.
