Number Of Ingredients 7

1 large eggplant (or two small) (1 1/2 to 2 cups diced eggplant)
2 eggs, beaten
1 cup milk
2 cups crushed crackers
2 cups shredded cheddar cheese
1/4 cup butter, melted
salt and pepper, to taste

Steps:

  • Preheat oven to 400 degrees F. Spray a 2 quart baking dish (or 8x8 inch) with nonstick cooking spray.

Tips:

  • For a crispier eggplant, slice the eggplant thinly and salt it for 30 minutes before cooking. This will help to draw out the moisture and prevent the eggplant from becoming soggy.
  • If you don't have a meat mallet, you can use a rolling pin or the bottom of a heavy saucepan to pound the eggplant slices.
  • Be sure to cook the eggplant slices until they are golden brown and tender. This will help to ensure that they are cooked through and have a nice flavor.
  • Don't be afraid to experiment with different cheeses. Mozzarella, Parmesan, and ricotta are all classic choices, but you can also try using other types of cheese, such as cheddar, Gruyère, or fontina.
  • Serve the eggplant Parmesan casserole immediately with a side of spaghetti or garlic bread.
