CREAMY CHEESY POTATOES

Creamy Cheesy Potatoes image

Comfort food at it's best! I don't usually measure when I make this dish, so the ingredients are approximations. You may need more or less of an ingredient to suit your tastes. If you want a cheesy dish, use the cheddar cheese soup, otherwise use the cream of mushroom to use as a creamy base.

1 (32 ounce) bag frozen hash browns (shredded or cubed)
2 cups cheddar cheese (can be reduced fat)
16 ounces sour cream (can be light)
1 (10 3/4 ounce) can cream of chicken soup (can be 98% fat-free soup)
3/4 cup butter or 3/4 cup margarine
1 cup corn flakes (more if desired)

  • Bake 1 hour at 350.

Tips:

  • To achieve the creamiest texture, use Yukon Gold or Russet potatoes.

  • Use a high-quality cheddar cheese for the best flavor.
  • For a richer flavor, use a combination of cheddar and Parmesan cheeses.
  • Add some chopped bacon or cooked sausage for a savory twist.
  • For a vegetarian option, use vegetable broth instead of chicken broth.
  • Serve the potatoes immediately for the best taste and texture.
