3 (10 ounce) bags clean fresh spinach, roughly chopped
1 ¼ cups heavy cream
¼ cup butter
2 tablespoons minced garlic
3 tablespoons minced white onion
6 slices shredded provolone cheese
½ cup freshly grated Parmesan cheese
salt and pepper to taste

Steps:

  • Heat a large skillet over medium-high heat. Add spinach and cook until wilted, stirring constantly. Remove from the skillet and drain in a colander. Try to squeeze out as much liquid as possible.
  • Melt the butter in the skillet over medium heat. Add garlic and onions; cook and stir until tender, about 5 minutes. Add the spinach and stir in the heavy cream. 1 (1 ounce) package dry onion soup mix
2 cups sour cream
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Drain spinach. In a medium mixing bowl combine spinach, soup mix and sour cream. Spoon into greased casserole dish and top with cheese.

I found this recipe in our local grocery store's (Hannaford) sale circular. I plan on making this as one of my side dishes on Easter Sunday so posting on Zaar for safe keeping. The only changes I will make with the recipe is in place of the canned spinach, I will be using 2 10 oz. boxes of frozen chopped spinach that I will defrost and squeeze dry. I will probably also double the recipe because we are all spinach lovers here.

2 (13 1/2 ounce) cans spinach leaves, drained and chopped
2 eggs, beaten
1 (10 3/4 ounce) can cream of mushroom soup
1/2 cup sour cream
1/2 cup milk
1 cup shredded cheddar cheese, divided
1 (6 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees.
  • Grease or butter a one quart casserole dish.
  • In a medium bowl combine spinach, eggs, soup, sour cream, milk and 3/4 cup cheddar cheese; mix well.
  • Spoon into casserole dish and top with remaining 1/4 cup cheese.
  • Bake 20 minutes or until lightly browned.
  • Remove from oven and top with French Fried Onions.
  • Bake an additional 5 minutes and serve.

1 (8-ounce) cream cheese, room temperature
1/2 cup half and half
2 (10-ounce) packages frozen chopped spinach, squeeze to remove as much water as possible.
1/8 teaspoon cayenne pepper
1/4 teaspoon nutmeg, fresh grated
1/2 teaspoon Kosher salt
1 cup sharp cheddar cheese, shredded, divided
1 cup Asiago cheese, shredded, divided

Steps:

  • Sauté onion in oil until tender. Set aside to cool. Mix half and half and cream cheese with a mixer until creamy. Add spinach, cayenne pepper, nutmeg, kosher salt, 1/2 cup sharp cheddar cheese, 1/2 cup Asiago cheese and sautéed onions. Mix well. Pour into a 9-inch buttered casserole dish. Mix together remaining cheese and spread over casserole. Bake at 350°F for 45 minutes or until casserole is bubbling and top browns.
