3 chicken breasts, boneless, skinless, cut into bite size pieces
1 (10 1/2 ounce) can condensed cheddar cheese soup
1 bunch green onion, chopped
1/2 cup milk
1/2 shredded cheddar cheese

Steps:

  • In skillet, heat a small amount of butter or oil. Add chicken and saute. When chicken is almost done, add onions and continue to cook until chicken is thoroughly cooked. Then, add the soup, milk, and cheese. Stir and reduce heat. Let simmer 10-15 minutes. Great served over mashed potatoes!

3 lb boneless skinless chicken breast - thinly sliced, about 1/4 inch thick
1 1/4 oz package, taco seasoning mix
3/4 c water - more to thin if becomes too thick, before chicken is tender
1/4 - 1/2 c frozen corn, thawed - fresh charred on grill would be wonderful when corn is in season
1 - 15 oz white queso blanco cheese sauce - carefully heated
3 - 4 green onions, sliced - tops too
1 - 2 medium jalapeno's - seeded and sliced thin
8 oz refried beans - heated
1 medium tomato - seeded and diced
8 oz sturdy, corn tortilla chips
1/2 - 3/4 c guacamole - fresh is best - including link to my recipe

Steps:

  • 1. In a large skillet over medium heat - add a small amount of oil and once hot add chicken, separating as it cooks. Once no pink remains - stir in the taco seasoning and water. Simmer for 12 - 15 minutes. If becomes too thick, add a little more water. Once chicken is good and tender, remove from heat and set aside.

  • 3. In a large casserole dish place half the tortilla chips. Dollop evenly with half of beans, Sprinkle evenly with corn, jalapenos, onions. Drizzle evenly with half the cheese sauce. Evenly spread half the chicken. Repeat starting with chips.
  • 4. Once you have second layer. Sprinkle with tomatoes. Top with desired sour cream and guacamole. Serve immediately, so chips stay crunchy.
  • 5. Family thought they were awesome. Other toppings that could be used would be black olives, cilantro, red onion, anything you like on your nacho's. Shredded cheese could be added to the top as well and placed under broiler to melt a few minutes.

This is one of the ultimate favorite dishes in my house. Every loves it and I can't seem to make enough of it to satisfy their appetite for it. It is simple and really really good.

4-6 chicken breasts, boneless and skinless
1 box stove top stuffing
1 cream of chicken soup
1/2 cream cheese, softened
1 stick of oleo
1/2 soup can of milk
1/2 soup can chicken broth
4-6 swiss cheese slices

Steps:

  • 1. In a baking dish 9x12x2 put raw chicken breast in the bottom of pan. Add 1 slice of swiss cheese on top of each breast. Set aside.
  • 2. In a saucepan add soup, milk, broth, and cream cheese. Cook on low until smooth and creamy. Pour over chicken breasts.
  • 3. In a medium mixing bowl, add the stuffing. Melt the oleo and pour over top. Mix well and pour evenly over chicken.
  • 4. Cover with Tin foil and bake at 325 for 1 hour. Remove from oven. Take tin foil off and bake an additional 10-15 minutes until topping is lightly browned.
